She barely knows how to boil water. Okay she does, but that's about it. She can also operate a microwave. This is totally a beginner, no recipes for stuff like pot roast, or filet mignon with a cream marsala sauce. Just simple things to get by, but more that Top Ramen and Cup of Noodles every night. I don't want her to waste money going out to eat every night. Not until I go to visit her. =)

Put anyone can boil up some pasta and put a store bought sauce over it.
Also boneless skinless chicken breast are versatile! You can cook them up in a skillet with a bit of olive oil and garlic and serve with pasta. You can cut them up into bite size pieces and cook the same way and add some sauce to them and serve over rice or pasta or on some greens. You can add some taco sauce or season packet to them and have chicken taco/tortillas.

I remember when I was at that point, barely being able to boil water. My first cookbook was Better Homes & Gardens, the one that's red checkered on the cover. Very easy stuff, very informative. Maybe you could give that to her as a going away gift. From there I just kept getting more cookbooks and magazines. There's a really great magazine out for simple called Quick Cooking. Many recipes only have 5 or less ingredients. It's not gourmet, but simple and easy comfort foods.

I wish her the best, I ended up owning a restaurant by starting with that BH&G cookbook!

Pot roast is actually VERY simple:
2-3 lb chuck roast
Salt & pepper
Onions
Potatoes
Carrots
Season roast with salt & pepper. Brown roast on all sides. Cut onions in quarters and add to pot with meat. Add 1/4 cup water. Cover and cook over low heat for 2 hours. Slice potatoes & carrots into 6 pieces. Add to pot, cover cook for 1 hour or until potatoes are tender.

Baked chicken breasts (salt & pepper chicken, bake fro 45 minutes in 350 oven).

She needs to make Hamburger and Tuna Helper her best friends until she feels more comfortable in the Kitchen. Chicken breast and salmon fillets can also be easy and quick. just put them in a plastic bag with a store bought marinade of her choice when leaving for work in the moring or before bed. Then when she get home put oven on about 350 and bake until done. Add some rice a roni and a can or frozen veggies.

Rachel Ray and dude on Good Eats also drop good tips.

We use Rachael Ray's recipes a lot. They're good, they're generally pretty quick, and she's cute as a button. (Hubby's got a big fat crush on her.)

Oh...and let me give you some easy ones of mine:

Pigs in a blanket. Better and cuter than hotdogs.

Ingredients:
Hot dogs
Those canned Croissant thingy's that pillsbury makes.

Get em' home, wrap the dogs in croissants, put em' on a cookie sheet, toss them in the oven at 350 for 15 minutes, and you're done.

For christmas you should get her a George Foreman grill. I use that sucker for everything, and it's SO easy.

Chicken Teriaki: I take 4 boneless chicken breasts, toss them in a zip lock baggie for about 4 hours with some smashed up garlic cloves, and about 3/4 bottle of teriaki sauce. Put all that in the fridge to marinate. (you can leave it longer or shorter in there, it's just what you have time for)

When you're ready to eat, pull them out, put them on the foreman, and baste them as you grill them. That takes like 6 minutes to cook. Just turn them every 3 minutes.

If she likes mac&cheese (who doesn't!) have her try this:

Boil macaroni pasta, then drain but don't rinse.

Put hot pasta back into pot and drop a couple of tablespoons of butter while stirring to let it melt and coat the noodles.

Turn the stove on low heat, and add cheddar cheese, an egg, and a can of condensed milk to the noodles. Stir until bubbly and thick!

Tell her to add a pinch of salt and a little pepper and nutmeg.
Thats it!

really easy pasta recipe...

Get a lb of pasta (linguine preferably)
box of frozen broccoli
1/2 lb small cleaned shrimp

all you do is take 1/3 cup of cooking oil and put in a frying pan. then add minced garlic according to taste and red pepper according to taste. let it simmer and then add the broccoli and shrimp. While you are doing this boil the pasta. drain the pasta once the shrimp are the correct color and the broccoli cooked. Put everything in a bowl and mix together. its delicious and very easy.

There's a great cookbook called "500 3-Ingredient Recipes: Simple and Sensational Recipes for Everyday Cooking"
Once you have your pantry stocked with simple things like olive oil, etc. you just use 3 main ingredients.

I have areally nice recipe for a nutritious sandwich, get some good italian bread, toast it under the grill for a couple of minutues then take it out, sprinkle with olive oil add parma ham, place back under the grill for 2 more minutues. Finally add fresh mozzarella, tomaotes and olives, place the 2 slices of bread together and eat, it is yuuuummmy!!!
