Hi,

Today is Tuesday, and I want to prepare three Thanksgiving casseroles to be baked on Thursday. Will they keep ok in the fridge? I'm making macaroni and cheese (I want to cook the macaroni, the cheese sauce, and lay it out in the baking dish), butternut squash casserole (cook squash and sauce, lay in dish), and a veggie casserole (same as above). Basically I want to prep them tonight so that on Thursday all I have to do is pop them in the oven. Is it too far in advance to make them? Most recipes say "make up to one day in advance" but this would be two days in advance. Advice needed!

Your mac and cheese might not fair so well. The noodles begin to lose texture the longer they sit in moisture. The squash casserole shold be ok, but if you add bread crumbs I'd wait until the last minute or they will become soggy. The veggies should do well. Keep them all very cold in the frig. Best of luck.

Veggie casserole will taste much better if cooked in advance, the flavours will mingle, you will only have to heat up on Thursday. I wouldnt be happy with the maceroni cheese being left cooked or uncooked, sauce could go off very easily.

Two days is fine. Of course, keep them in the fridge the entire time, tightly wrapped. If I were you though I'd blanch the vegetables for the veggie casserole and assemble it the night before you plan to serve. I don't find green veggies retain their freshness if prepared too far in advance. Good luck!

You could always put them in the freezer today and get them out tomorrow. Also, it would be better if you half-cooked them so when you put them back in the oven, you won't over cook them and dry them out.

I wouldn't do it. They will become soggy. I would prepare them tomorrow night.
