VENISON BURGERS
Yield: 8 burgers
1 lb Ground venison
3 oz Pork fat back, ground
Salt
Freshly ground pepper
Mix venison, pork, salt and pepper, handling as little as possible.
Heat grill. Brush burgers with vegetable oil and grill about 4
minutes; turn and cook to desired doneness. Serve on rolls with your choice of condiments.

Most places already grind and make burgers with there venison..
Just make your hamburgers the way you normally do..
My husband says he don't like venison so i mix the venison burger with hamburger and make patties and meatloaf by mixing the two of them together. he never knows the difference.
I add an egg and oatmeal to my hamburger or venision burger to make it go farther. but other than that just make them the way that you do regular hamburgers.

Regular beef is the best. Venison has little fat and will fall apart if cooked into a burger. So use cheap hamburger meat to add more fat. I just could never add pork fat to it..yuck.
You it as is for pasta with sauce or lasagna.

the venison will need a little fat, try grinding up some pork shoulder.I like 3 to 1.3 parts venison---1part pork.They make a great burger and ground meat mixture......

I mix a quality ground pork with the venison. i grind them together at the same time it blends better. package and freeze. I add spices when i am cooking it.

Some people like to mix it with pork since its cheap, but you can mix it with beef as well. Its up to you really. Try a 50/50 mix with pork or beef. If you don't mind the gamie flavor of deer use less pork/beef. I guess you could even use turkey burger, or rabbit, or squirrel or.......

Use oat bran and egg as binders, then add seasoning if you wish, but the meat itself is generally well-flavoured so maybe just a little salt and pepper, or crumble a stock cube.

who ever is processing the meet for you have them add some port or beef fat to it.. venison needs to fat to hold it together when fixed as a burger.
if all else fails.... make spagetti with it. :)
