Do you do anything different when cooking a fresh turkey? I just found out I have won one and I will use it instead of the frozen one I bought. Is there a difference in taste?

Lucky you!

I disagree with the posts. Fresh turkeys are FAR superior to frozen and there are a few things to keep in mind. You will have one tomorrow and ultimately can decide for yourself. Fortunately you won one... as they tend to be much more expensive too.

Yes, fresh turkeys are more convenient because there's no thawing... but they are also moister and have a better taste. Most fresh turkeys are organic, free range (check that from its source). They tend to cook a tad quicker and brining them makes them superb.

I like to brine and the roast in a Reynolds bag. I remove the bag the last 30-45 min or so for a crispy skin.

What is the difference between a fresh or frozen turkey?

There is no quality difference between a fresh or frozen turkey. Frozen turkeys are flash frozen immediately after packaging to 0 degrees F or below and held at that temperature until purchased. Once defrosted, the meat is virtually as fresh as the day it was processed. A frozen turkey may offer a real grocery value as the bird can be purchased when supermarket sales provide extraordinary offers and coupons. Fresh turkeys are chilled after packaging and have shorter shelf lives. Because they are perishable and require special handling and merchandising, fresh turkeys are slightly more expensive than frozen turkeys. Fresh turkeys provide convenience because they do not require thawing. Click here for more information: http://www.eatturkey.com/consumer/prep/prep.html#fresh
