If you want kebabs buy some marinade of some sort and dice up some chicken and leave to marinade for as long as you have time, then put on skewers with pepper / courgette and feta cheese for example and then pop it on top of some rice or noodles! Easy and cheap, even cheaper if you leave out the feta cheese and just use the veg!
Yum

Here's a cheap way to prepare chicken a bit out of the ordinary:
Place chicken pieces in a cake pan, and top with a jar of your favorite spaghetti sauce, sprinkle with Parmesan cheese. Bake for an hour. Serve over your favorite pasta.

1/4 cup butter or margarine
4 bone-in chicken breast halves
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups buttermilk, divided
3/4 cup all-purpose flour
1 (10 3/4-oz) can cream of mushroom soup, undiluted
Garnish: chopped fresh parsley
Melt butter in a lightly greased 13- x 9-inch baking dish in a 425 degrees oven.
Sprinkle chicken with salt and pepper. Dip chicken in 1/2 cup buttermilk, and dredge in flour.
Arrange chicken, breast side down, in baking dish.
Bake at 425° for 25 minutes. Turn chicken, and bake 10 more minutes.
Stir together remaining 1 cup buttermilk and cream of mushroom soup; pour over chicken, and bake 10 more minutes, shielding chicken with aluminum foil to prevent excessive browning, if necessary. Drizzle gravy over chicken and Mashed Potatoes. Garnish, if desired.

what you can do is...
get an oven recipient and place the chiken in it.
make holes all over the chken with a fork and then surround it with:
new potatoes
cherry tomatoes
rosemary
chilly, salt and pepper
peas
olive oil
and a splash of white wine
bake it for about 45 minutes at 180 degrees
keep checking it sometimes to see if it need to be turned over
if it looks dry add some oil and wine
it takes a while to cook but in the meanwhile you can do something else!!!

If you have some spices in the cupboard butterfly chicken breasts (or could work with drumsticks) flatten out and dip in flour mixed with spices (i.e. cajun or everyday seasoning or chilli flakes), season to your taste and griddle on a pan or fry, this is lovely, creates a really nice outside coating. Either that or if you have some wraps and spices fry with peppers/onions and have fajitas!
