do i need cheese to sprinkle on top..?

You are supposed to use Parmesan on top, but if you have a sauce then you can go without. I don't always use cheese so don't worry.

Carbonara is a traditional Italian pasta sauce. Carbonara comes from carbone, which is Italian for coal, and many believe the dish derives its name because it was popular among charcoal makers. Others believe, however, that the dish is called carbonara simply because of all the black, freshly milled pepper that is used.

The Anglo-American Carbonara recipe is made from cream,[1] [2] eggs, parmesan cheese (sometimes with Pecorino Romano cheese), and pancetta (or some other type of bacon). Cream is not part of the original Italian recipe [3], as cream is not used with pasta in central Italy, but it is a standard ingredient in the anglicized version of the recipe. Other ingredients that are often added to-taste include salt, pepper (white or black), and/or garlic. Lastly, some recipes add peas for color.

From Italy:
Carbonara needs a cheese like Pecorino, Parmesan or Grana Padano. If you don't use one of these cheese, you cook something else.
It's very wrong you don't need cheese, I've read a lot of nonsense answers, you don't add mozzarella nor garlic in carbonara, and Parmesan isn't in the top, it's mixed with eggs.

Well without cheese you are just making spaghettis

you can do it without cheese. fry your bacon and onion, cook your spaghetti mix your spaghetti in with your bacon and onion. Mix an egg into a few spoons of cream then take the spaghetti mix off the heat and mix the cream and egg into it. the heat of the spaghetti and bacon will cook the egg - but not so much that it all looks scrambled, this will all be very tasty!

I don't actually like pasta, but I think carbonara is without cheese.

With Spag Carbonara, you don't need cheese as it will taste fine as it is! Trust me!

It is normally topped with mozzarella cheese, Parmesan is optional.

I should think the cheese is optional. If you don't have it leave it out! the food police don't stop by for such minor misdemeanors!

You don't need the cheese. They cheese is nice, but not essential.
