You are supposed to use Parmesan on top, but if you have a sauce then you can go without. I don't always use cheese so don't worry.

From Italy:
Carbonara needs a cheese like Pecorino, Parmesan or Grana Padano. If you don't use one of these cheese, you cook something else.
It's very wrong you don't need cheese, I've read a lot of nonsense answers, you don't add mozzarella nor garlic in carbonara, and Parmesan isn't in the top, it's mixed with eggs.

you can do it without cheese. fry your bacon and onion, cook your spaghetti mix your spaghetti in with your bacon and onion. Mix an egg into a few spoons of cream then take the spaghetti mix off the heat and mix the cream and egg into it. the heat of the spaghetti and bacon will cook the egg - but not so much that it all looks scrambled, this will all be very tasty!
