I'm a general contractor and have done many kitchens. It's great that your interested in finding the best product. So many people are just interested in the 'look' these days and not product performance which can be just as important!

Today there are a lot of products on the market and a lot of choices.

Porcelain will can stain and can easily be shipped or cracked.
Stainless Steel is a great dual purpose option, but if you have hard water it can get build up of scale and water spots.
Concrete is being used more and more. It's a great option. If sealed properly it is less likely to stain, but you will need to be careful with your dishes on this surface.
Natural Stone - depends on what type.. Marble will stain. Granite is an great option, but expensive. It too has some maintenance to maintain the look and finish. Quartz is becoming more popular and has less maintenance than granite.
Man made materials like corian are a great option. I happen to prefer corian to a lot of other options. And it comes in a wide range of choices.
Cast Iron is a good option if you can afford it. It is very heavy.
Copper has a lot of maintenance issues unless you want it to patina.
Soapstone is great, it ages nicely, it does discolor but it is part of the 'look'.

stainless steele is the best, clean good and lasts a long time
a porcelain sink is second best, cleans well and if cleaned right will last about 10 years or more, then might have to be repainted...
concrete i have never heard of using for a kitchen sink
natural stone and resin are very expensive and cracks very easily, so i would go with stainless steele or porcelain

porcelain sinks also do stain ,and can crack, stainless is the best bet, as for countertops go granite ,concrete and limestones need yearly sealing and are prone to mars and scratches, the resins are good but not too cosmetic, the cambria and corian brands are not very functional as you cannot set anything hot on them or you cant cut on them , so stainless for the sink and granite for the countertop. ...Contractor in the luxury home market

Stay away from Porcelain, it cracks.
Resin will stain.
I'm not sure about concrete, or natural stone, never seen them.
Stainless Steele is your best bet, Nothing ever happens to that and it is always in and cleans easily.
