Correction, the beret color depends on what type of unit. Airborne=Maroon, Army Rangers=Tan, Army Special Forces=Green, Regular Army=Black. Air Force berets are Red=Combat Controllers, Maroon=Para Rescue, Black=Security Forces, and Navy Blue=Air Force Academy. But to answer your question, I will give you a couple of sources.

The reason the beret is green is that commandos stole several rolls of green material from a captured building during a raid in World War II. When they returned to the U.K, they decided it would be fitting to make this material into new berets. Few berets were made from this captured material, but the colour has been kept ever since.

Because that is what was chosen by the Department of Herlaldry, which authorizes ALL military uniform items. Special Forces is Green, while RANGERS is black. They use these colors because they are "subdued" and will match the battle dress uniforms (BDUs), as well as the dress (Class A) uniforms.
