Granny Smith is always a popular one, but I also like Winesap. Any of the tart apples. I usually use the mix of tart and sweet, like Empire.
There are literally thousands of different kinds of apples. How good any are depends a lot on where they're grown.

Romes or Granny Smith. You want an apple that is really firm so that it holds up under the heat of baking. If you use Macs or Delicioius apples, they get mushy. If you wanted to add a few macs to your pie apples that would be ok.

My girlfriend wants me to tell you, "green apples. Their tartness is perfectly offset by the combination of sugar and sweetness of the other ingredients. Furthermore, the firm texture remains crisp after baking as opposed to other red apples that lose their firmness upon cooking"

I like Granny Smiths. They keep their texture without turning to mush and are great with brown sugar, cinnamon and a touch of lemon.
