I can understand that the convenience of it is great if you're staying in Singapore, but I'm headed to Melbourne so I have to connect somewhere no matter which airline I fly. Thus I need to know if the the "executive economy" on Singapore's EWR-SIN route worth the extra money just based off of the larger seat pitch and good service?

By extra money, the "long way" to Melbourne from NYC-LHR-MEL on British Airways/Quantas is about 800 U$D less.

Dude if you think its worth the extra hundreds to get ther faster then thats up to you. Is not like the airline is going to make you a video of your trip and spoil you with caviar and offer you a gold watch for you trip. They surely are not going to wipe your butt for you. Matter of fact The bathrooms are the same size. Your not going to get anything bigger than a boeing 767. People have been paying more and more over he decades for the convenience of speed. Do you fit in that category.

Flight departs EWR-SIN 2300-0640 with total duration of 18.40 hours. Connecting SIN-MEL flight at 0955-2020 hrs. Enough time to take a shower, shop a bit at SIN. In-flight service is better, far better than Qantas or BA. Go for it. Unless you like to consider via LHR as a 'round the world trip'. Also there will be a stopover either at HKG or SIN. HKG is worth a visit if you have not visited it yet.

there are plusses and minuses - what you chose is up to you. Yes you will get beter food and services, more seating space and more padding on the seat. On the other hand, when I was flying China Airlines between NYC and TPE, I appreciated the one hour stopover in Anchorage, Alaska (refueling and crew change) so I could stretch my legs and buy a couple of goodies at duty-free.
