well i'm guessing hickory, it gives the turkey a nice smoked taste.

Alder, hickory, maple...the smoking point of these woods is higher so the turkey gets a more consistent smoking while they are consumed. They're also just plain tasty. :)

I've heard Hickory.
I know my brother in law uses mesquite and Hickory chips for hams....
I guess it would depend on what type of smoked flavor you want.

If you want to ruin it just use pine it will taste like turpintine! use a hardwood like oak or hickory
