There are a number of reasons; in the context of
symbolic or metaphoric meaning, or in a strictly magical context, or simply because of psychological associations. For example; Wine is the juice of grapes which has become infused with "spirits" - so based on that association it might be used in rituals or spells for that reason alone, but there are other subtle associations as well.

The secret to making wine was magic in itself - you squished some grapes and left the juice in a barrel and somehow it transformed itself - it's a little less mysterious if you understand about yeast and biochemistry but it's still provokes a sense of profound understanding that something unseen has changed the simple juice into something more powerful.

The whole 'pure' vs. 'impure' thing seems inconsistent if you reject "original sin" and silly human ideas about things being innately good or evil. In my view good and evil are what someone does not an arbitrary property of a substance, but I am not a christian or a follower of any religion.

In the time of the ancients it was wine which was most often the drink given to welcome guests - so it is also a way to welcome and offer hospitality to the spirits conjured there.

Bargains and deals are still celebrated with wine (or champagne) especially in the case of the sale of property like a house for example. Whether this is ritual or celebration is moot.

Wine has a transformative effect on human behaviour - it first elevates the mood and yet it can become a depressant if one consumes too much and in that case it often has a consequence the next day. In this it is much like magic also.

Wine was often used as a libation (offering) poured on the ground to share the drink with the earth gods (who gave it freely to man - so how could man be less than generous with it?) The idea was that to the generous soul the gods would grant fertility , prosperity and wealth... For the truly generous soul shares the blessings of the gods by nurturing others - as a parent gives to the child and the child imitates the parent by feeding the pets.

Another aspect of wine is that it may actually be a medium of transference - either by allowing herbs to be blended with it to make a potion or by helping to release highly charged emotional states built up while the ritual or spell is performed.

Lastly food and drink at the end of a ritual help to close the energy centers (sometimes called "chakras" in the eastern religions) which are often opened up to channel the energies used in the working of the magic. In this respect the wine is part of the ritual which is used to 'ground' excess energies which are left over and could cause disruptive situations to evolve if they are not properly returned to a state of balance afterwords.
This is a very important consideration if the ritual was in your own home.

Wine is an ancient drink. It developed along the same timelines as the cultures in the grape producing countries. Different parts of the world utilize different plants and the formulations from them. Think peyote in the Americas, for example. I think it's a timing factor; it's what was used at the time, so it's one factor wrapped up in most of the euro-judeo histories and mthologies we typically learn in the USA. Legends are old, rituals are old, wine is old.

First off, if you ignore any God/Jesus stuff, you're an idiot, because that's the answer. Back in the Jesus days wine was sometimes the only drink available because of limited ways to obtain clean drinking water. Wine could be made and stored easily and vineyards were plentiful. So when those rituals and spells originated they used the only drink that was safe to drink.

Wine is used because it is made from fruit. and different wines (mead) are used for different seasons and spells.

the gods each have a little niche that they fill, and each god has things that represent them. if you wish for the god to feel like you really understand them and wish their presence in your ritual you will bring something that represents them and makes them comfortable.

Creunuuos, god of the hunt,,bring Antlers.
Nemitonia, Goddess of rivers..Bring fresh spring water.

In Gaulish religion, Sucellus or Sucellos was the god of agriculture, forests and alcoholic drinks of the Gauls, also part of the Lusitanian mythology.

He is usually portrayed as a middle-aged bearded man, with a long-handled hammer, or perhaps a beer barrel suspended from a pole. His wife, Nantosuelta, is sometimes depicted alongside him. When together, they are accompanied by symbols associated with prosperity and domesticity.

Wine in many cultures is symbolic of blood, whether jesus' blood ;or for us pagans the blood of our god,who is the god of agriculture, wine symbolizes the life force or spirit of Nature and in rituals we use it for blessings. Also it is a disinhibitor which helps us to unwind before and after ritual.

Wine has been used for thousands of years in daily life for survival. Traditionally you mix wine into your water to make it drinkable since it kills off the bacteria and such.

Kosher laws and religious slaughtering are also based in traditional ways to prevent diseases and infections.

It was the way of life when the traditions were started and so they became part of the traditions.

only for those of us too scared to use blood , concercration takes extra time blood is already Holy and is already consecrated and also more powerful for ritual use then wine ( I only mean your own blood ) Please do not infer that i have meant the blood of another or an animal as this will completely screw your ritual up and more then likely result in a negative consequence

Personally, I use mead when I can get it. Other than that, I prefer apple cider or milk. Sometimes cow's milk, sometimes goat's milk. I like the symbology of those things.
