Whenever any of my children cooked for me, it was special and wonderful (no matter what they cooked) Your idea to cook for your parents is thoughtful and I'm sure they will appreciate whatever you make.
You don't say how old you are or how much cooking experience you have. My best advice is to make something that you feel comfortable doing.
Does your dad also like Chinese food, too? You might do some sort of stir-fry dish. You can follow a recipe and have all your ingredients measured out and cut up before you start to cook (since it all cooks real fast). Chinese is very versatile, and you can do a lot of substituting when you make something, to take into account people's preferences in food or to account for what ingredients you do and don't have on hand. You could use chicken. or pork, or beef, or shrimp, or even all of them!
Chinese food usually goes with rice. If you don't know how to make rice, there are "boil-in-the-bag" brands of rice that are easy to make and taste pretty good. If your parents aren't rice eaters, then skip the rice and use noodles instead.
Asian food usually goes with fairly simple and light desserts. You could go with some fruit, or perhaps some ice cream.

For something a little different how about making them a fondue style dinner. That is always fun and romantic,
Or maybe some chicken and rice with a nice white wine.

If my daughter were to prepare a romantic dinner for my husband and myself, it really wouldn't be romantic.
But otherwise, I would want her to prepare her best dishes and dine with us.
Romance would be for when my husband and I were alone. ;)
