Baked Ziti
2 lbs. Ziti (uncooked)
2 lbs. Ricotta Cheese
3 Oz. Grated Romano Cheese
3 Cups Garlic & Onion Tomato Sauce (any brand will do)
1/2 Teas. Black Pepper
1 1/2 lbs. Shredded Mozzarella Cheese

Cook Ziti according to package directions - 12 to 14 minutes
until al dente stirring often. After cooking, drain ziti well, but
DO NOT RINSE OFF UNDER WATER! While Ziti is cooking preheat oven to 350F. Combine ricotta, romano, tomato sauce (reserve 1/4 cup) and pepper in large mixing bowl. Gently combine cooked ziti with cheese/sauce mixture. In a 13"x9"x2" pan, spread the 1/4 cup reserved sauce. Add ziti and top with mozzarella cheese. Cover loosely with
aluminum foil and bake until mozzarella is thoroughly melted (about 12-15 minutes). Serve with garlic bread and additional sauce if desired.



RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
4 oz. (1 c.) shredded Cheddar cheese
2 tbsp. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. dry mustard
2 1/2 c. milk
2 oz. (1 1/2 c.) shredded Cheddar cheese
1/2 c. crushed potato chips
Paprika, if desired

Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, melt butter; blend in flour, 1/2 teaspoon salt and mustard. Add milk all at once. Cook until thickened, stirring constantly, about 1 minute. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Toss 1/2 cup Cheddar cheese with potato chips; sprinkle over top. Sprinkle with paprika, if desired. Bake at 350 degrees for 25-30 minutes.



CHICKEN PARMESAN
4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese

Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.

ITALIAN POTATO SALAD

Dressing:

1 1/2 cups olive oil
3/4 cup wine vinegar
1 teaspoon sea salt
1/4 teaspoon cracked black pepper
1/4 teaspoon each basil and oregano (or to taste)
pinch of red pepper flakes


Salad:

2-3 lbs baby new potatoes
2 large red sweet vinegar peppers
1 large red onion, sliced into rings

Combine ingredients for salad dressing. Slice vinegar peppers into strips. Slice onions into thin rings.
Scrub potatoes and remove eyes. Do not peel.

Steam or boil gently in their jackets until nearly tender. Remove from heat and drain. Cover and let sit 10 minutes to finish cooking.

Cut potatoes into bite sized pieces and set aside in a serving bowl.

In the same pan, bring remaining ingredients to a boil, then remove from heat. Allow to cool several minutes and add cooked potatoes (they should still be hot).

Allow potatoes to marinate for 10 minutes, then remove with a slotted spoon.

Season to taste with salt and pepper.

Save remaining dressing to use as a marinade for chicken or beef.

For a different taste, add 1/4 teaspoon rubbed sage and chopped rosemary or summer savory.

Up to 1/4 cup of the wine vinegar can be substituted with either balsamic or tarragon vinegar.

Serve warm or cold.

Calzones with Italian Tomato Sauce:

Deliver with potato chips and fresh fruit.

1 pound lean ground beef
3 1/2 cups (14 ounces) shredded mozzarella cheese, divided
1 (6-ounce) can low-sodium tomato paste
1/2 cup frozen chopped spinach, thawed and drained
2 teaspoons Italian seasoning
2 (10-ounce) cans refrigerated pizza crust
Olive oil
Italian Tomato Sauce

Cook ground beef in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink. Drain.

Combine beef, 2 1/2 cups cheese, and next 3 ingredients.

Unroll each pizza crust, and cut each crust into thirds. Roll each portion to a 5-inch circle. Spread 3/4 cup of meat mixture evenly over half of each circle. Moisten edges with water; fold dough over, pressing or crimping edges to seal. Place on a lightly greased baking sheet, and cut slits in tops to allow steam to escape. Brush with olive oil.

Bake at 375° for 25 to 30 minutes or until golden. Top with Italian Tomato Sauce; sprinkle with remaining cheese. Melt cheese under broiler, if desired.

Note: Freeze baked calzones up to 1 month, if desired. Thaw in refrigerator overnight. Wrap calzones in aluminum foil, and bake at 300° for 1 hour or until thoroughly heated.

Yield: Makes 6 servings

lasagna

a box of the lasagna pasta stuff
1 1/2 pounds of grounded beef (cook it too)
2 average sized cans of tomato sauce
14-16 ounces of any cheese (my favorite is mozarella)

boil the whole box of lasagna pasta ( one at a time if u have a small pot). then drain it. on a tray, layer the bottom with lasagna, then pour tomato 2/3 of the can and spreaded on the layer. then add the beef and cheese. then add another layer of lasagna, and repeat (using up all the beef). when you finally get the top layer of lasagna pasta, pour the remaining sauce and cheese. if u mite like beef on the top, go ahead, make it however u want =)
throw it into the oven at 350 for about half an hour- an hour with a foil covering on top to keep it moist.

stuffed shells are the best..use a blend of shredded italian cheeses, mild chedder cheese and mix with cottage cheese...fry meat add minced garlic, pepper, salt, italian seasoning and oregano after meat is browned add meat base spag sauce..boil the noodles..preheat oven to 350 and bake for 25 mins. stuff shells with cheese mix and put in baking dish and cover with meat sauce before you put in oven. Its very good and tasty.

You need to be more specific. apps, entree desserts. There are thousands of them. Pleas be more specific and list items that do don't like or want to use (ex: some people hate zucchini but there are a lot of recipes calling for this) Glad to help otherwise.

you need to watch jada on the cooking channel. she makes alot of easy and delicious looking italian foods.
sorry i forget the name of her show. its something italian
