Dessert is up to you, if you know what I mean

Make-Ahead Antipasto

Ingredients

2 c Chopped carrots
1 c Chopped sweet green peppers
1 c Cauliflower florets, cut in tiny pieces
1 c Quartered mushrooms
1 c Chopped sweet pickles
1/2 c Chopped celery
1/2 c Pitted black olives, sliced
1/2 c Pimento stuffed green olives, sliced
1/2 c Small white pickled onions
1/2 c Chopped marinated artichoke hearts
1 cn (7-1/2 oz) tomato sauce
3/4 c Ketchip
3 tb Olive oil
1 cn (6-1/2 oz) solid white tuna

Instructions

In large saucepan, bring all the ingredients expect for the tuna, to a boil. Reduce heat and simmer, covered, for 20-30 minutes or until carrots are tender-crisp, stirring occasionally. Drain tuna; add to vegetable mixture and simmer for 5 minutes longer, letting tuna break up into small pieces. Transfer to serving size containers. Can be refrigerated for up to 2 days, or frozen for up to 3 months.

Spinach-Ricotta Stuffed Shells

Ingredients

Vegetable Cooking Spray
1 c Chopped Onion
6 c Chopped Fresh Spinach
1 1/4 c Minced Cabbage
2 tb Chablis OR Dry White Wine
2/3 c Part-Skim Ricotta
2 tb Minced Fresh Parsley
1/4 ts Pepper Divided
15 Cooked Jumbo Macaroni
Shells
1 cn (10 1/2 Oz.) Chicken Broth
1 cn (6 Oz.) Tomato Paste
1/4 ts Salt
1/4 ts Ground Nutmeg

Instructions

Coat A Large Skillet With Spray. Place Over Medium Heat Until Hot. Add Chopped Onion & Saute Until Tender.
Add Spinach, Cabbage & Wine. Saute 4 Min. Stir in Ricotta Cheese, Parsley & 1/8 t., Pepper. Saute 2 Min.
Stuff Each Shell With 2 1/2 t. Spinach Mixture. Arrange in Shallow Baking Dish Coated With Spray. Set Aside.
Combine Remaining 1/8 t. Pepper, Broth, Tomato Paste, Salt & Nutmeg in A Small Bowl. Spoon Over Shells.
Cover & Bake At 350 For 30 Min. OR Until Heated

well if its a romantic evening together make sure you dont go too over the top, keep it simple with no strong flavours

last thing you want is to be uncomfortably full if you are having a romantic evening (if you know what i mean)

if you are not very confident then make sure you choose something that cant go wrong !!

try a melon starter, just slice the melon and serve chilled.

try a steak for main course, do a few roasted vegatables with it instead of chips, try roasting some red/green/yellow peppers for about 20 mins then pouring a can of chopped tomatoes over and sprinkle with mozzeralla cheese, roast for a further 30 mins.. serve with some roasted potato wedges. Remove skin from potatoes and cut them into wedges (the bigger you make the cuts the longer it will take to bake.

Put the wedges in a bowl and pour Italian dressing over top. Mix or shake until all the potatoes are well coated, roasting will take about 30/40 mins depending in size

for dessert nothing too stodgy some ice cream or fruit maybe

or a liqueur coffee

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over pasta.


CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1-2 Tomatoes, diced
1 ½ cups Ranch or Cucumber Ranch dressing

In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.

Chicken and white wine sause with new potateos roasted served with green beans....
This is a tried and tested meal and loved by my friends...
One chicken breast each fryed on a low heat.. Olive oil is best to use... not too much though.. once the chicken is brown add 1 and a half glasses of white wine allow the alcohol to burn off, then add creme frais....dont know exact amount just judge on the sause consitency.... you can no leave this too one side and heat on the hob again later... place a baking tray in the oven with olive oil and allow to heat add your potateos and cook for 30mins beans will boil in 5 minutes.... serve this with a white wine,, I promise this is easy and tastes devine...

Make it original and wholesome, try corned beef or spam fritters, with carrot pureed and thick chips. Make sure theres plenty of cut bread. Maybe some gravy on the chips. Also massage his temples whilst he eats and refill his beer glass when its empty, and never forget to curtsey and always keep you head below his whilst walking five yards behind.

definately visit www.bbc.co.uk/food there are sooo many recipes on there for all tastes, budgets and time-scales it's helped me to eat more healthily at uni its great! Everything from starter to dessert.
