Cooked Egg Nog

If you are worried about raw eggs, make a cooked egg nog instead.

INGREDIENTS:

* 6 eggs
* 1/4 cup sugar
* 1/4 tsp salt
* 1 quart milk
* 1 tsp vanilla
* 1/4 tsp nutmeg
* 1/4 tsp cinnamon

PREPARATION:
Beat eggs, sugar and salt together in a saucepan. Stir in half the milk (2 cups). On low heat, cook until mixture is thick and thinly coats a spoon. Make sure to stir constantly. Remove from heat and mix in the last of the milk and the vanilla.Cover and chill overnight. Serve eggnog with a dusting of nutmeg and cinnamon.

Easy Egg Nog

Egg nog is a pretty simple drink to make. This is the perfect recipe for egg nog novices.

INGREDIENTS:

* 2 eggs, beaten well
* 3 tbs sugar
* 1 tsp vanilla
* 1/8 tsp nutmeg, ground
* 2 1/3 cups milk

Blend all ingredients together and serve chilled.

That's so gross. It's made out of fresh eggs (the fresher, the better!), milk or cream, sugar, vanilla and rum, if you want it alcoholic.

A point, though. Since the eggs are not cooked, you must be very careful with handling. Ensure that the eggs are NEVER allowed to get warmer than 4 degrees C, and once you are finished making the eggnog, it should go straight back into the refrigerator.

Traditional recipes call for raw eggs. This recipe is cooked gently to kill any bacteria that may be lurking in the eggs. I have never heard of using spoiled eggs!!!

Virgin Eggnog

INGREDIENTS:

* 6 large eggs, plus 2 yolks
* 1/2 cup, plus 2 tablespoons sugar
* 1/4 teaspoon salt
* 4 cups whole milk
* 1 tablespoon vanilla extract
* 1/2 teaspoon grated nutmeg
* 1/4 cup heavy cream, whipped to soft peaks
* Additional grated nutmeg for garnish

PREPARATION:
Combine eggs, egg yolks, sugar, and salt in a heavy 3- or 4-quart pan, whisking until well-combined. Continue whisking while pouring milk in a slow, steady stream until completely incorporated.

Turn on burner to lowest possible heat setting. Place pan on burner and stir mixture continuously until an instant-read thermometer reaches 160 degrees F. and the mixture thickens enough to coat the back of a spoon. Be patient. This should take about 25 to 30 minutes.

Strain mixture through a fine sieve into a large bowl to remove any accidental small cooked bits of egg. Add vanilla extract and nutmeg, stirring to combine. Pour into a glass pitcher, decanter, or container and cover with a lid or plastic wrap. Refrigerate this egg custard mixture to chill at least 4 hours or up to 3 days before finishing.

When ready to serve, pour heavy cream into a bowl and whip until it forms soft peaks. Fold whipped cream into cold custard mixture until combined.

For grown-up eggnog, add 1/2 cup of brandy, bourbon or rum to the hot eggnog mix before chilling! ;-)

Real eggnog is made with 2 raw fresh eggs, an 8 oz. glass of whole milk, two teaspoons of sugar, a teaspoon of vanilla extract and a couple shots of rum or other favorite whisky if you like alcohol and then mixed in a blender and served with a dusting of nutmeg on top and add some whipped cream too if you like.

AUNT VENICE'S EGG NOG SAVANNAH STYLE

1 doz. eggs, separated
1/2 c. sugar
1 qt. milk
Nutmeg
1 qt. heavy whip cream
1 qt. bottle Southern Comfort liquor (much better than rum for eggnog)

Separate egg whites. Put yolks in extra large mixing bowl with sugar. Blend in mixer on high until light and fluffy. Add milk. Blend well. Pour in whipping cream while mixer is still running on very low. Pour liquor on beaters to blend. When done, wash beaters.
In separate bowl whip up egg whites until stiff (only need about half) and slowly stir into egg nog. Top with nutmeg and chill at least 8 hours. It will warm you up!!

Granny Cowart never drank a drop of alcohol, but she sure did enjoy this eggnog!

Eggnog uses actual eggs. The eggs are 'cooked' by the addition of brandy which is highly alcoholic, and the additional beating of the ingredients together 'cooks' the eggs even more.
