I'm making a cookbook for a project in my food & nutrition class. I choose the theme for my cookbook desserts, but the cookbook is supposed to be divided into sections like: Appetizers, Salads & Veggies, Bread, Main Dish, Dessert, and so on.

But my cookbook is all about desserts, so how could I do it? Like what type of dessert food could be like an appetizer? I thought maybe cookies or brownies, and as like a main dish I thought cakes. I wouldn’t actually say "main dish", but just make the title cakes or whatever it is. And ideas?

I hope your food & nutrition class teacher can be a bit flexible for you and let your creativity open up. This sounds like a dessert cookbook to me. A dessert cookbook should only have the dessert section. You might try to divide the desserts into categories (like cakes, pies, cookies, frozen desserts, etc)

Unless the point of the assignment is to have you show foods from the "usual" sections, your teacher should show some flexibility and even appreciation for what you have done.

I teach and the thing that makes me feel the most like I am making a connection is when my students learn to think for themselves.

OK got it, Appetizers are" Starters" anything in the Mini category
Salad& Veggies are "Sides" like cookies and such, that's like cookies and milk or with coffee.
"Main Course" are Top Knotch Cakes and Souffles, everything Exotic.
Dessert, "Finishers" Ice Cream Cakes, Souffles, Cream Puffs. Just look at all the possible "Sweet Treats" and categorize them.

You could use a fruit plate as an appetiser. Make it with melons (cantelope, honeydew and watermelon) and berries (blueberries and strawberries.)
Salads and vegies could be perhaps mini vegetable tarts or cheese quiches.
Soup could be watery jelly...green might be good.
Bread could be plain muffins.
Main dish could be a 'meal' on a plate made of marzipan. You can shape it into meat, carrots, peas etc and paint it with food coloring so it looks like a meal but is really a sweet used as a dessert.
Dessert ...well...you have many choices.
