A good size kitchen with new drywall, took 4 gallons of primer for one coat then 6 or so gallons of semi-gloss for 2 coats.

But in fact I did let the coats dry completely between spraying. Is 10 gallons for a good size kitchen (15' X 18') normal for a sprayer?

You don't know what your doing? how's that for an answer Pal. I own my own construction company for over twenty-five years, painting was our number one money maker. We sprayed up to six houses a week.
A sprayer is one of the most efficient ways to paint there is and, there is no over spray, that's why you use a shield or a simple piece of cardboard.
A kitchen of average size, 200 (floor space)square feet, about one half gallon finish paint. If it's a first time and dry wallboard about a gallon so, your doing something wrong and, Oh! It would take about ten minutes. Roller painting by hand, finish about two gallons for the primer if you wanted a good coat and about one gallon of finish.

I guess this tells you something?
I wouldn't use as much paint as you did on an entire house with three bedrooms.

you were not letting the coats completely dry before applying the next. I have painted both ways.m You do lose the paint left in the hose.

You loose 10% from overspray.
