I'm going to visit my grandma, mom, and little brother over christmas weekend and since my family aren't big cooks I thought it would be fun just to make snack foods. Any suggestions on what I could make? I've thought of Rotel, Sugar Christmas Cookies, and Little Smokies. I would love some more suggestions!! Thanks!!

Idea:

Christmas Rock Road

A block of white chocolate, red and green or other Christmas themed marshmallows and crushed nuts (favorite type)

Melt the chocolate over a stove

Meanwhile, prepare a brownie tin and spread out the marshmallows.

When chocolate is melted, pour over the top and sprinkle with nuts.

Leave over night and it will be read for eating the next day!

Idea:

To make colored sugar for cookie decorating:

Place 1 cup of sugar in a sandwich sized bag. (Use the kind w/ the top that zips shut)

Add 4-6 drops of food coloring.

Zip closed & let kids shake/mix it until the sugar turns colored.

(It doesn't take much shaking & even the "mixed" colors like orange, purple (1 drop red to four blue) & aqua come out nicely.) We made the kid's favorite colors & to decorated the top of iced cookies.

Christmas Snacks-Candy cane ice cream
You need an 8oz. clear plastic cup,1 quart of vanilla ice cream and 1 quart of strawberry ice cream and peppermint extract. Mix the extract in the vanilla ice cream. Then make layers of vanilla-strawberry, vanilla-strawberry until you reach the top. This is a candy cane treat. My kids love it and it helps them learn to pattern.

These cookies are simple and doesn't take long to make (about 10 minutes, excluding baking times). They are called strawberry thumbprints, but if you do not like strawberry you can of course use raspberry or whatever other jam you like. This recipe makes 3 dozen cookies. Here goes:

3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
1 cup sugar
1 egg yolk
2 teaspoons vanilla extract
1/2 teaspoon salt
1 cup ground walnuts
2 cups all-purpose flour
1/2 jar (12 ounces) seedless strawberry jam

1. Beat butter, 1/2 cup of the sugar, yolk, vanilla and salt until fluffy. Add the walnuts and flour. blend on low speed just until combined; dough will be crumbly but moist. Gather dough together with your hands to form a ball. Divide dough in half; wrap in plastic, refrigerate for one hour.

2. Heat oven to 375 degrees. Line 2 large baking sheets with nonstick foil. Break off 1 tablespoon of dough and roll into a ball. Then, roll ball in remaining 1/2 cup sugar to coat. Place on prepared baking sheet. Press a deep indentation into center of dough, large enough to hold 1/2 teaspoon jam. Fill indentation with jam; repeat to form 36 cookies.

3. Bake cookies at 375 for 12 to 14 minutes, rotating pans halfway through, until lightly golden. Cool on pans on racks for 5 minutes; use a spatula to transfer the cookies to racks to cool completely.

Good luck and I hope you like the recipe. If it does sound a little complicated, don't worry...it really isn't. Happy holidays!

Little broiled sandwiches:

Take some bread, put a slice or two of cheese on the bread, then add a few slices of a cold cut lunchmeat, like Louis Rich turkey, on top of the cheese. Then place a slice of tomato on the top, sprinkle with some feta cheese and sliced green onion, and some pepper, and toss it open-face in the oven for 5-10 minutes.

Cheese-Filled Mushrooms
1 1/2 pounds white mushrooms
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
3/4 cup mayonnaise
Crumbled cooked bacon, to taste (optional)

Preheat oven to 375 degrees F. Lightly grease a large cookie sheet; set aside. (If desired, line cookie sheet with aluminum foil to save on cleanup.) Wash mushrooms thoroughly; dry and remove stems, hollowing out a hole where the stem was attached to the mushroom. Set aside. Mix together cheeses, mayonnaise and bacon (if using). Pack the center of each mushroom with a mound of the cheese mixture. Arrange mushrooms on cookie sheet. Bake until cheese is browned and mushrooms are shiny, about 20 minutes. Mushrooms may be stuffed and refrigerated ahead of time, then baked as needed.

Veggie Pizza
1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz. can sliced water chestnuts, drained and chopped

Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned. Remove from oven and allow to cool. Combine sour cream, mayonnaise and dry dip mix and spread over crust. Place vegetables over dressing and top with shredded cheese. Refrigerate until ready to serve. Cut into squares before serving.

Tomato-Mozarella Bites
20 grape or cherry tomatoes, halved
20 fresh basil leaves
20 small balls fresh mozzarella cheese (often labeled bocconcini)
salt and pepper to taste
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil
20 toothpicks

Using a toothpick, spear a half of a tomato, a piece of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients. Place on a serving dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce.

Cocktail Meatballs
1 bag cooked, frozen meatballs
1 16 oz. can Jellied Cranberry sauce
1 12 oz. bottle chili sauce
2 TBLSP dark brown sugar
1 TBLSP lemon juice

Combine all ingredients in crockpot, cook 2-3 hours until cooked through and serve.

SO SIMPLE APPETIZER
1 loaf Italian or French bread, sliced diagonally
Salami
Cheese (Provolone, Mozzarella, American or your favorite) sliced
