Mexican Cornbread
Corn Bread with Peppers and Cheese

It's really good! We always make a batch of Mexican cornbread when we cook chili; it's also a good dinner with just a salad and the beer of your choice. The original recipe came from akgua!akguc!mah.


Serves 8
1 1/2 cups
(250 g) self-rising cornmeal

3/4 cup
(180 ml) cooking oil

2 eggs

1/2 cup
(75 g) onions, chopped

2 Tbsp
(15 g) green pepper, chopped

2 or 3 jalapeno peppers, chopped

8 oz
(250 ml) sour cream

8 oz
(200 g) cream style corn (one small can)

3 oz
(100 g) pimentos (one small can)

1 cup
(120 g) grated cheddar cheese

Preheat oven to 325F or 160C

Mix all ingredients except cheese together.

Pour half of mixture in a well-greased skillet. Use an iron skillet if you have one. Spread cheese over the mixture, then pour remaining batter on top.

Bake in 325F or 160C oven for 1 1/2 hours, or until done.

Serve warm.

No, but a guy I worked with at a restaurant once had his hands in jalapeno juice right before going to the bathroom. He didn't wash his hands off before going, and, well I probably don't need to get into any more detail. I think you can figure it out.

All you need to do is grate some cheese and incorporate it while kneading/mixing and the add the sliced peppers. No sweat.
