An "odyssey" is a journey. The word comes from the ancient Greek. It was first used to describe the journey of Odysseus in Homer's book "The Odyssey" In this paragraph the writer is obviously about to describe how getting a haircut in Japan is like a microcosm of the economy. How your hair is cut, the attitude of the staff, concern for detail, equipment used, processes involved, etc. demonstrates the same attention to detail which has been so successfully applied in Japanese industry.

The original meaning of the word odyssey was angry man.
It is obviously an "eye-opener" for this person to appreciate the advances and technology in the shop. If such a simple task can receive such attention, then it is not surprising that such application will achieve economic success.
