That would be Harvard Beets and I love 'em.
HARVARD BEETS
1 teaspoon cornstarch
3 teaspoons sugar
1/2 teaspoon salt
3 teaspoons vinegar
2/3 cup water ( I just use the jucie from canned beets)
1 teaspoon butter
2 cups sliced or julienned, cooked beets (, , canned is fine)
In med saucepan, mix cornstarch, sugar, and salt.
Add vinegar and water.
Cook and stir until thickened.
Add butter and beets.
Heat through.
If you want you can add some cloves & or, pickling spices.

CHRISTMAS BEETS
2 c. diced cooked beets
1/2 c. French dressing
1 c. sour cream, whipped
1/2 c. finely chopped green onions
Place hot beets in serving dish. Pour French dressing over beets. Toss lightly. Top with sour cream, sprinkle with onions.

I'll give you what I've got for beets - hopefully it's here...
"Harvard Beets" - 4 servings
1 (16 oz.) can sliced beets; drained (reserve liquid)
1 tbsp. cornstarch
1 tbsp. sugar
3/4 tsp. salt
Dash pepper
Reserved beet liquid plus enough water to measure 2/3 cup
1/4 cup vinegar
In small saucepan, stir together cornstarch, sugar, salt and pepper; gradually stir in water and vinegar. Cook, stirring constantly, until mixture thickens and boils; boil and stir 1 minute. Stir in beets; heat through.
"Orange Beets" - 4 servings
1 (16 oz.) can sliced beets; drained
1 tbsp. cornstarch
1 tbsp. brown sugar
1 tsp. finely shredded orange peel
3/4 tsp. salt
Dash pepper
3/4 orange juice
1 tbsp. vinegar
In small saucepan, stir together cornstarch, brown sugar, orange peel, salt and pepper. Stir in orange juice and vinegar. Cook, stirring constantly, until mixture thickens and boils; boil and stir 1 minute. Stir in beets; heat through.
"Beets in Sour Cream" - 4 servings
1 (16 oz.) can shoestring beets; drained
2 tbsp. butter or margarine
2 tsp. flour
2 tbsp. vinegar
1 tbsp. sugar
1/4 tsp. salt
1/4 tsp. dill weed
1/8 tsp. pepper
1/2 cup sour cream
3 tbsp. light cream
Melt butter in medium saucepan over low heat; blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat; stir in vinegar and the next 4 seasonings. Heat to boiling, stirring constantly; boil and stir 1 minute. Stir in beets; heat through. Stir together sour cream and light cream; heat through over low heat and pour over hot beets.
