If by "holiday" you mean Thanksgiving, I think I would just say "Happy Thanksgiving" and let it go, because Thanksgiving is an American holiday and people from other countries don't celebrate it.

If you mean Christmas/Hanukkah, I think a nice gift card or something office-oriented, like a nice pen set, with a simple card that makes no mention of any specific holiday and just says "Season's Greetings" or something on it would be appropriate. It would be rude to just not acknowledge him altogether because you're unsure of his customs.
