Egg Drop Soup
4 cups chicken broth, divided
1/8 teaspoon ground ginger
2 tablespoons chopped fresh chives
1/4 teaspoon salt
1 1/2 tablespoons cornstarch
2 eggs
1 egg yolk
DIRECTIONS
Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan. Stir the salt, ginger and chives into the saucepan, and bring to a rolling boil. In a cup or small bowl, stir together the remaining broth and cornstarch until smooth. Set aside.
In a small bowl, whisk the eggs and egg yolk together using a fork. Drizzle egg a little at a time from the fork into the boiling broth mixture. Egg should cook immediately. Once the eggs have been dropped, stir in the cornstarch mixture gradually until the soup is the desired consistency.

"Won Ton Soup" - Serves 6 to 8
1 egg; beaten
1/2 cup finely chopped onion
1/4 cup finely chopped water chestnuts
1 tbsp. soy sauce
2 tsp. ginger
1/2 tsp. sugar
1/4 tsp. salt
1/8 tsp. freshly ground pepper
1/2 lb. finely ground pork
1/4 lb. fresh shrimp; peeled, deveined and chopped
40 won ton wrappers
8 cups water
8 cups chicken stock
1 cup coarsely shredded Chinese cabbage
1 cup thinly sliced mushrooms
1 cup sliced scallions (green onions)
1) To make won ton dumplings, combine egg with onion, water chestnuts, soy sauce, ginger, sugar, salt and pepper. Add pork and shrimp; mix well. Position won ton wrappers with one point toward you; spoon rounded teaspoon of pork-shrimp mixture in center. Fold bottom point of wrapper over filling; tuck point under filling. Roll up from bottom, forming triangle, leaving 1" at the top. Moisten right corner and fold in. Moisten left corner and fold over right; press to seal.
2) Bring water to a boil; drop in won tons, one at a time. Simmer, uncovered, about 3 minutes. Refresh under cold water; drain well.
3) Bring chicken stock to a boil. Add Chinese cabbage, mushrooms and scallions; simmer 5 minutes. Add won tons; simmer 5 minutes longer.
"Egg Drop Soup" - 4 servings
5 cups chicken broth
1/2 tsp. sugar
1 egg; lightly beaten
1/3 cup sliced fresh spinach
2 green onions (scallions); sliced
In large saucepan, bring broth and sugar to a boil over medium heat. Reduce heat to low; drizzle beaten egg into hot broth. Remove from heat; stir in spinach and onions.
