I know it sounds like Sci-Fi, but my point is that natural-born trees take many years to grow and we're cutting all of them down way too fast for new ones to replace them. Would it be possible to "design" an alternative breed? What would it take?

Yes, yes, they're working on it. A number of fast growing tree cultivars have been created already.

We are not cutting down trees faster than we can replace them. We have tree farms in the South East, and because there is a profit motive to manage them correctly (just like with any agricultural product), they are chopped down (or harvested) at a correct rate.

In fact, if you want more trees, use more paper. The more demand for paper, the more acreage will be dedicated to trees.

I am sure the timber industry is working on that. It would enhance their profits if they could do it.
