The juices are running clear but it's only been cooking 2 1/2 hrs in a crockpot on high.

2 1/2 hours should be plenty.

Easiest way to tell is to twist the end of the leg bone,
If it's springy or tight,,it needs more cooking.

Just Twist the bone like you're trying to unscrew it outa the leg.

If it's loose in the legmeat,,it's cooked.

On every type of poultry I know of,,the Leg takes longest to cook thru.
So it's a pretty reliable indicator.

Chicken is a peculiar meat to be so "delicate".
You cannot hardly overcook it,,,the longer it cooks the more tender it gets.

Especially when cooked ,,covered in a crockpot.
1~1.5 Hours on High is usually "cooked" well enough to serve.
3~4 Hours,,,it's more tender and practically falling off the bone.

For a crockpot there's 2 ways,instant read thermometer at 175 there is no carry-over for a crockpot and grab the leg and give it a slight twist, if it pops and comes loose then that babies done, time to eat!

What kind of chicken are you cooking? If it is a whole chicken and the juices run clear then it is done. If you have a meat thermometer make sure it reads about 160 this allows for carryover cooking also. If you have chicken parts then it is done for sure.

when you think it's done take the leg and try to twist the bone. If it turns all the way and comes loose it's done. Also if you have a thermometer 180 is a good temp. BTW when you cook the bird cook breast side down so the breast meat stays moist through the cooking process

Sounds as done as done can be hon! Generally when juices are clear and meat isnt pink, the chicken is finito.

I am a former chef the temperature of the chicken has to be 165 degrees internal temp. the chicken can still be slightly pink

See if you can twist the leg - if it pulls free easily it's cooked, if not - continue cooking.

make a cut into the thickest part. If it is not pink then it is done.
