Your oil may not be hot enough. Drop one in when you think it is hot enough. If it immediately starts cooking then you can add the rest. If not, let it heat up some more. It is also best not to stir too frequently as this to makes them soggy. Cook until a golden brown and they float to the top of the oil and remain on top. Careful not to get the oil too hot. Medium high is usually fine. Check the temp. on cooking instructions. If you are baking them then they will always be gross.

Are they frozen or fresh made? Making sure the oil is HOT but NOT to the point of burning is important. Also they can be fixed in oven,if frozen kind,just be sure to turn them at least once half way through the cooking process. I only make homemade fries,which are potatoes cut into strips(I always rinse my potatoes in a colander then pat dry before cooking) then put - a few at a time- into hot oil in a pan on stove(a medium size saucepan is what I use) making sure the oil is FRESH and only about 1/2 way up the pan to keep from bubbling over the top and causing a fire. I ALWAYS keep a box of Baking Soda or Flour handy to put out the fire too,if needed(DO NOT EVER POUR HOT OIL DOWN THE DRAIN OR SPRAY WITH WATER). I only cook the fries until they "float" to the top and are lightly browned(which only takes a very short time,about 3 minutes or so)NEVER EVER LEAVE THE PAN UNATTENDED EITHER. Then put take them out of the oil with a slotted spoon(long wooden handled metal) and put them on about 4 papertowels that are folded together to make a "towel" for draining them on. Then IMMEDIATELY sprinkle salt over them. Good luck Stay safe with the HOT OIL and Stove. NEVER wear long sleeves while cooking them either. SAFETY FIRST ALWAYS.

Maybe the oil is too hot so they burn outside and don't cook inside , test it with an oil thermometer

CLASSIC FRENCH FRIES

3 to 4 cups vegetable oil for frying
2 pounds Idaho or russet baking potatoes, peeled, rinsed, and dried
Sea Salt, to taste



1. Pour enough oil into a deep fryer to reach at least halfway up the sides of the pan but not more than three-quarters. Heat the oil to 325°F.
2. Using a chef’s knife or a mandoline, cut the potatoes into sticks 1/4 inch wide and about 3 inches long. Dry the potatoes thoroughly with clean paper towels. Divide the potatoes into batches of about 1 cup each.

3. Fry the potatoes until lightly colored but not brown, 4 to 5 minutes per batch. Remove to a plate lined with paper towels. Repeat with remaining potatoes.

4. Heat the oil to 375°F. Fry the potatoes in 1-cup batches until they are golden brown and crisp, 1 to 2 minutes. Drain on fresh paper towels. Repeat with remaining potatoes. Sprinkle with salt and serve immediately.

Makes 4 to 6 servings.

Hi Matt!

THe best way to cook French Fries is to have the oil Very hot! THen put one fry in and when it bubbles put them all in. Then just let them cook. do not turn them. like a steak only once. Of course this is homemade fries not the store bought soggy ones. hope it works for you!!!

fast food french fries are usually cooked frozen and dipped in a deep fryer for 2-3 mins. i'm not sure what kind of french fries you are trying to cook or why they are coming out badly, but the ones from the store are intended to be baked. if you are making your own from scratch i would suggest a very hot frying pan and plenty of oil, but don't drown them. just a layer too cook in and turn them often.

After you cut up the potatoes, soak them in cold water until ready to fry. Blot all the water off them before frying them in batches for a few minutes, remove from the fryer and let drain while making the other batches.

Then fry them again at a higher heat, again in batches, until done. You should get the nicest crispy fries ever. And season them the minute they get pulled out of the fryer the second time.

Here's a recipe you can try...

"Garlic Fries" - 6 servings

3 lbs. peeled baking potatoes; cut into 1/4"-thick strips
4 tsp. vegetable oil
3/4 tsp. salt
Cooking spray
2 tbsp. butter
8 garlic cloves; minced
2 tbsp. finely chopped fresh parsley
2 tbsp. freshly grated Parmesan cheese

Preheat oven to 400*. Combine first 3 ingredients in a large zip-top plastic bag, tossing to coat.
Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake 50 minutes or until potatoes are tender and golden brown, turning after 20 minutes.
Place butter and garlic in a large nonstick skillet; cook over low heat 2 minutes, stirring constantly. Add potatoes, parsley and cheese to pan; toss to coat. Serve immediately.

heat the oil for a few minutes first so that the french fries doesnt come out soaked with oil.

I broiled french fries the other night instead of frying them. They came out pretty good- not all greasy..

Maybe because you dont put them on a stove and fry them. The best way to make them is frying them on a stove.Dont put them in the oven because they turn out mushy.Good Luck!
