Lots of good suggestions already - I usually like to add some sort of fruit such as apples, mandarin oranges, dried or fresh cranberries. I also put sausage in - its great with the apples.

I've always used "stuffing" for something cooked inside a vegetable or poultry and "dressing" for anything cooked separately.

I have seen Oysters added to Country Corn Bread stuffing. Check ouy Paula Dean's Thanksgiving episode on www.foodtv.com. Also, the only difference to stuffing and dressing is weither or not you put it into anything. Dressing tends to be more moist because it is not "enclosed" in something while it cooks.

Fresh sage is fabulous in cornbread dressing. I agree that dressing is more of a moist dish. Be sure to use plenty of eggs and butter to keep it moist.

Apples and Sausage are great in cornbread
stuffing. Toasted pecans also work well.
