I'm looking for a lovely dark rum, something a bit different, so not Lambs, Woods 100, Captain Morgans etc....
I like Morgans spiced and Havana, and I tried some in the Dominican Republic that was beautiful but I can't remember its name? any recommendations?

I have been bartending for over five years (and drinking for far longer ;-)), and the best dark rum is Meyer's, hands down. It is a deep, flavorful jamaican dark rum that is the best I have ever tasted. It carries the strong taste that comes from a high initial sugar content, but unlike most dark rums, it is actually surprisingly dry.

Or if you like spiced rums, then the best you can get is Sailor Jerry's. It is a strong (92 proof), flavorful spiced rum made in Hawaii from Sailor Jerry's original recipe. I often describe it as Captain Morgan and SoCo's high-proof lovechild. It is amazingly tasty and needs no chaser - which is almost a con. I can easily go through a fifth and a half of it without realizing, for it is almost like drinking juice.

Havana Club 7 year old is very good, and well worth a try.

I believe that Havana Club's Añejo 15 Años Gran Reserva is absolutely superb, but is incredibly difficult to obtain.

(BTW - I'm talking about the real Havana Club rum from Cuba, rather than the appalling rip-off that Bacardi are trying to launch in the US).

The Dominican rum you are probably talking about is Brugal. The dark rum type is called Añejo. This rum has a very nice taste and goes down smooth.

Gosling's Black Seal -- rich, deep flavor and fabulous molasses aroma. It's become the must-have in our household for a variety of mixed drinks, from hot rum toddies (try mixing in a little orange liqueur and something cinnamon-flavored like Goldschlager) to mai tais in summer.

If you want something really outstanding to sip, try Barbancourt. It's aged in oak, and released with different amounts of age (the older ones are more expensive, of course). Produced in Haiti, Barbancourt has the rich, burnt-sugar aroma of a fine rum but the complexity and depth of a cognac. It's good in mixed drinks as well, but it really shines on its own.

As a novelty rum, we bought some coconut rum (Malibu is one brand). It's very good IN things, including one of my favorite cold-weather warmers:

Almond Joy

6 oz. hot strong coffee
1 shot Gosling's Black Seal rum
1/2 shot coconut rum
1/2 shot amaretto
Instant cocoa powder/syrup to taste
Whipped cream

Mix in a mug, top with whipped cream and serve. It's great -- coconut, almond and chocolate mixed in with hot coffee, the perfect thing for coming in out of the cold.

Enjoy!

Sant James from Barbados is a dark one, different from others.
About the Dominican one that you don't remember ,there are two ones,in particular that are good, but not "dark" : "Bermudez Siglo de ORO" and "Barcelo Imperial".In something they remember to me Cognac.
...Don't forget "Barbancourt 5 stars" from Haiti,of course.
