Try Lemon Fluff it's a light and fruity dessert.

2 cups Nilla Wafers crumbled
1 large box of lemon Jello
1 can evaporated milk
1 teaspoon vanilla extract
Your choice of canned fruit (pineapple tid bits, mandarin orange slices, peaches in light syrup or fruit cocktail)

Chill the can of evaporated milk in refrigerator overnight.
Crush the Nilla Wafers in a gallon size Ziploc bag or use food processor until no large chunks remain. You may substitute graham crackers too.
Prepare the Jello as instructions state but reduce water by 1/3 cup for a firmer set when chilled. Refrigerate Jello for 30 minutes and then add canned fruit w/o juice, stir and return to refrigerator for additional 30 minutes.

Whip the evaporated milk with vanilla extract on high speed mixer until soft peaks appear.
Add the Jello and fruit to the whipped milk and stir by hand with spatula til just incorporated.

Butter an 8"x8" glass dish and pour 2/3 of the Nilla Wafer crumbs in the bottom of the dish.
Pour the Jello mixture over the crumb base and then top the Jello mixture with the additional crumbs.
Chill for several hours and serve cut into squares.
I've added chilled cranberry sauce, bananas, strawberries, etc. to the Jello. Try lemon lime, orange or any of your favorite Jello flavors.

I agree that creative is wonderful, especially with desserts. But that's only part of it. Thanksgiving dinner invitations go out with a certain expectation to them, including pie. It's one time of the year where traditional, the expected, is not mundane, it's the highlight.

Keep the traditional pies and serve whatever creative versions of dessert you will, in addition to them.

Just a thought.
