They gobble because they haven't learnt good table manners!

Only male turkeys (toms) gobble. Females (hens) make a clicking noise. The gobble is a seasonal call during the spring and fall. Hens are attracted for mating when a tom gobbles. Wild toms love to gobble when they hear loud sounds or settle in for the night.

What a bunch of trolls. Turkeys gobble for different reasons during different times of the year. In early spring they're attempting to show dominance and attract a hen. Late spring/early summer they tend to go silent, then during the mid/late summer months they get busy again establishing their territory and their roost.
