Anyone knows anything about the famous ketchup???
a friend of mine told me they do it from trashy tomatoes, like the ones not good for the markets...
it's that true????

Most over-ripe fruits make the tastiest jams/jelies, si it should hold true to making ketchup as well.

Not all ketchups are made from tomatoes.
I had found a recipe years back, made from apples.. it went so much better with pork than the tomato kind ever did.
The recipe is not the one I had years back.. but why not give it a try:
Apple Catsup Recipe
Serves/Makes: 6 cups
ngredients:
4 cups Unsweetened apple sauce
1 teaspoon Ginger
1 teaspoon Cinnamon
1 teaspoon Cloves
1 teaspoon Mustard
1 teaspoon Onion flavoring
2 teaspoons Salt
2 cups Vinegar
1 teaspoon Pepper
Directions:
Combine all ingredients. Simmer slowly until thick.

This is a myth. The H.J. Heinz company contracts with many farmers to grow a particular variety of tomato and the conditions that the plants are to be grown. All the tomaots are bought by Heinz and any surplus not used may not be sold by the farmer. The farmers did give them away to local people. The tomatos are not sub-standard regects. Heinz has no interest in bringing off-flavored, sub-standard, ketchup to market. They would lose business. They also do not want the bad publicity and money loss that goes with a national product recall. (I bet they are in Snopes, the site for urban myths),

Uhhmm.. my grandfather used to make a ketchup from scratch. And the recipe that he used required some older, not so fresh tomato's. I think there easier to dice, and doesn't require so much longer to cook. Might want to try it.... I'd love a good recipe.

I don't know, but I would think this true. You don't need perfect fruit to make juice that is wonderful.. same with ketchup...

Probably, but they cook it and add spices and stuff, so who cares that the tomatoes may not have been perfect? Not me!
