Beef Salami

Ingredients

5 lb lean ground beef
5 ts Morton's Tender-Quick salt
1/2 ts crushed red pepper
2 1/2 ts garlic salt
4 ts table salt
1 ts black pepper
1 ts liquid smoke flavoring
2 1/2 ts mustard seed

Instructions

Combine all ingredients; mix well. Refrigerate for 24 hours. Remove and mix again; put back in fridge for 24 hours. Remove; shape into 4 rolls. Using broiler pan to catch grease, bake for 8 hours at 160 F, turning over after 4 hours. Cool, wrap in plastic wrap, and refrigerate.

Just like any sausage. Ground up meat forced into a very thin tube normally made of intestines of pigs. The quality of the meat depends on the manufacturer. The big companies put whatever they can in (beef and or pork and or lamb and or mutton), plus pork fat and spices. That's all. Buy from a local trusted butcher so you know what you are getting.

look into food network. they have an unwrapped episode that shows you how they make it in a factor sorry i cant remember how you do it right now but I'll put it when i find it!

you probably dont "really" want to know, it's pretty gross. It is comprised of the parts of meat that they cant do anything else with.
