PECAN PIE.
INGREDIENTS: *1/3 cup margarine or butter, melted *2/3 cup sugar *1 cup corn syrup (light or dark) *pinch salt *3 eggs
*1 cup pecan halves *1 9 inch pie crust
PREPARATION:
Beat eggs, sugar, corn syrup, salt and melted margarine. Stir in pecans. Pour into pie shell. Bake at 375 F for 40 to 50 minutes. Refrigerate pie after baking.

RED VELVET CAKE.
INGREDIENTS: *1/2 cup butter *1-1/2 cups sugar *2-1/2 cups all-purpose flour (I use self rising and it turns out the same)
*2 eggs *1 cup buttermilk (don't leave this out!) *2 tablespoons of cocoa *1 teaspoon baking soda *1 teaspoon salt *1 tablespoon vinegar *1 teaspoon vanilla *2 ounces RED food coloring
PREPARATION:
Cream butter and sugar until fluffy. Add eggs and beat. Make a paste of coloring and cocoa. Add this to cream mixture. Add salt, buttermilk, flour and vanilla. Mix soda and vinegar, then add to mixture
Bake at 350 for 25 to 30 minutes.
WARNING: If you are using self-rising flour, do NOT to add any salt or baking soda.

I have one for pumpkin pie bars that are very easy to make and taste as good as a fresh pie.

All you need is for crust
3/4 cup flour, 3/4 cup quick oats, 1/2 to 1 cup chopped nuts (walnuts taste best), 1/2 cup softened, 1 box of butterscotch pudding and pie mix (never use instant).

For filling 2 eggs, 1 cup flaked or shredded coconut (only if desired), 1 1/2 pumpkin pie spice, 1 15oz can of pumpkin, 1 can 14 oz sweetened condensed milk.

Then all you need is preheat oven to 350 degrees, in large bowl mix all crust ingredients until well combined. Press mix into a ungreased 13x9 pan.

in the same bowl you used for the crust beat eggs. stir in all filling ingredients until blended. pour over the crust.

bake 35-45 minutes or until knife comes out clean. cool for about 1 hour, cut into squares, cool whip to top. store in fridge

prep time 20 min ready completely in 2 hours
