I have been very careful every time but half the times the yolk was broken after it sat on the frying pan. I cracked the eggs gently about 3 or 4 times, and opened it just a bit on top of the frying pan. Any ideas?

This is how i do it -
1) tap the egg carefully until it breaks. make sure you are tapping in the middle
2) gently spread the egg shells apart leaving the egg in a butters pan
3) when flipping the egg use a spatula that is lightly buttered/oiled (whatever you use). Make sure the whole egg is on the spatula so it doesnt break in half

Crack the egg on a flat surface, not the side of the frying pan (that causes shells to be pushed into the egg).

Usually one or two quick raps on the counter top works for me, about as hard as you would knock on a window. I also pour the egg into a shallow bowl and then transfer it to the pan. Why? you ask. Well, use one rotten egg and you will understand.

I'm sorry but Thank You, you made me smile today, I have seen so many people that can't crack an egg and I have that in my head the look when they look back at me after soooooo many eggs have broken. My advise, practice, practice, practice, or get to really like Omelets and scrambled eggs

ok, dont think I'm trying to sell you something but pampered chef sell an egg separator. It actually works really well.... you just crack your egg lightly and put it in the separator. It keeps shells and yolks out of your whites. It clings to the sides of a bowl too.

You probably only need to quickly tap the egg once and slip it out of the shell.

Sounds like you are heavy handed -- try just 'cracking' the shell, then pull the shell apart, holding it a couple of inches above the skillet.

crack the egg sort of close to the surface that you are cracking the egg on and don't over-whack the egg when trying to crack the surface.

the older the egg the more they will break its like the membrain breaks down

practice that's the only way try cracking in exactly in the middle....I'd have to show you...Damn...sorry just keep practicing, or find a woman to do it for you...LOL
