Im cooking thanksgiving for the first time and would really appreciate your ideas!

I use red potatoes(skin on), celery, green bell pepper, either white or purple onion, black olives, dill pickle and some of the brine, (I don't like sweet for potato salad), Bestfoods or Hellmans mayo, Old Bay to taste, and after it's all mixed together top it with paprika and parsley. I always get requests for it when anyone wants potato salad. I add hard boiled eggs when there's no egg haters around.

Potatos - 5lb bag
Eggs - dozen
Mustard / Mao / Onion / Sweet Pickle Relish / Celery / Salt & Pepper

Cook the potatos and eggs. Cut potatos into bite size pieces and put in lg bowl. Peel the eggs and chop up. In smaller bowl add about 1 cup of Mao / 1/2 cup yellow mustard / 1/2 cup relish / about 3 stalks of celery chopped fine / one onion chopped fine / salt & pepper to taste. Mix well and taste -- this is where you can adjust the 'sauce' -- it takes a LOT more time & effort to "fix" the salad if the sauce is already mixed with the potatos/eggs.

Dilled Potato-Apple Salad
Ingredients:
4 small red potatoes (about 1/2 pound)
2 cups plus 1 teaspoon water divided
1/2 cup snow peas, cut diagonally into 1/2 inch pieces
1/2 cup chopped celery
2 tablespoons thinly sliced green onions
1 medium unpeeled red apple (your choice), cut into thin slices
3 tablespoons white wine vinegar
1 tablespoon canola oil
1 teaspoon dill
1/2 teaspoon sugar
salt to taste

Preparation:

Combine potatoes and 2 cups water in a medium saucepan; bring to a boil. Cover saucepan, reduce heat and simmer for 15 minutes or until tender. Drain and let cool. Peel and cut into 1/4 inch slices and set aside.

Cook snow peas in a small amount of boiling water 15 seconds, drain. Rinse under cold running water; drain well. Combine potatoes, snow peas, celery, green onions and apple slices in a medium bowl. Toss well.

Combine remaining 1 teaspoon water, vinegar, oil, dill, sugar and salt. Add to potato mixture, tossing gently to coat. Cover and chill salad 1 hour.

I am from the south and this is how we make it.

cooked potatoes (of course) put drained potatoes in large bowl. add sweet pickle cubes, chopped onions, boiled eggs (cut up),mayo and mustard. Good Luck and I hope you love it
