also, I bought a turkey pop-up thermometer is this okay to use with a small chicken?

As long as you don't hit bone it'll work stuck in the thickest part of the breast. The pop-up has a glue of sorts that melts at the proper temp,( we hope) and lets the indicator pop-up.

Metro Chicken Marinade

4 lbs chicken
1/3 cup olive oil
2/3 cup dry white wine
2 tablespoons onions, chopped
1 garlic clove, crushed
1 teaspoon dried rosemary, crushed
salt and pepper

Mix all ingredients except the chicken and put chicken in a shallow pan and coat with marinade.
Let sit at least 1 hour at room temperature, or longer in refrigerator. Turn occasionally.
Remove the chicken from the marinade and reserve .

Do not use those things they are very inaccurate. Buy a meat thermometer. You should cook poultry to 170 degrees F. Insert the thermometer half way into the thickest muscle and make sure it is not touching any bones.

put the thermometer in the thickest part of the bird, usually along the breast.Yes, it's fine to use it on small chickens as well.
