You ned to pulp them first.

I use a fermenting bin and a piece of 2inch square oak, about 2 foot long. We cut them into pieces and then mash them in the bin.

You cannot ferment the pulp, you need the juice.

We normally go through a few bottles of the previous years cider while doing this !

I made cider by bringing roughly chopped up apple JUST to the boil to soften it. I then added Pectolase to the cooled pulp to destroy the cell walls and free the juice. I then squeezed the juice out using a nylon mesh. To be certain I did not get 'funny' flavours I then brought it just to the boil to kill any bugs before putting it in a closed container and when it was cool adding wine yeast.
Hardly traditional cider but at least it was wholesome, alcoholic and very drinkable. To make it stronger add some sugar before fermenting - up to a 4 pounds a gallon should ferment out and not make the cider sweet but start with about 8 ozs.
BTW - I did not add any dead rats which are frequently an additional ingredient in traditional cider making!

Yikes...I would smush it all up in a food processor or a blender, then pour it into a large mesh colander that has been lined with a flour sack towel.

The machines I have seen at the cider mills are huge. Best of luck to you!

If you have a food processor place pieces of apple in there and give them a real good go i think you will find this will work.

Cut the apples in quarters, slice off the core part of each quarter, then pop into a food processor.
