I like to saute it in butter with onions over a medium heat. A little salt and pepper and life is good.

Squash Casserole Recipe
A squash casserole with pecan or bread crumb topping, along with cheese and onions.
INGREDIENTS:
2 pounds yellow squash, cut in 3/4-inch cubes
1 cup chopped onion
1 teaspoon salt
1/4 teaspoon freshly ground pepper, or to taste
water
4 tablespoons butter
1 cup saltine crackers, crumbled
1/2 cup milk
1 cup shredded Cheddar cheese
1/2 cup pecans, finely chopped, or buttered bread crumbs
PREPARATION:
Place the squash, onion, salt, and pepper in a large saucepan. Add a small amount of water. Cover and cook the squash until tender, stirring occasionally and adding more water if necessary. Drain the squash and onions; return to the pan and stir in the butterTaste and adjust seasonings, adding more salt and pepper to your taste.
Butter a 1 1/2-quart baking dish well. Stir the crumbled crackers into the squash mixture, and turn into the buttered casserole. Pour the milk over the squash and sprinkle with the cheese and chopped pecans or crumbs. Bake at 350°, uncovered, for 20 minutes, until the milk is absorbed and the squash casserole is bubbly. Serve hot. Serves 4 to 6.
Yellow Squash Patties
INGREDIENTS:
2 cups grated yellow squash
1/4 cup self - rising flour
1/3 cup self - rising cornmeal
1 small onion, chopped
1 egg, beaten
pepper to taste
PREPARATION:
Mix all ingredients together. Spoon out into hot greased frying pan (I use olive oil). Brown both sides. Drain on paper towel.

my gramma used to make hers this way and I loved them!
Cut the squash into small chunks and put in a small saucepan with a little water and butter and simmer on low until it boils away and do it again with the butter and water. After a while you should be able smoosh the squash and then salt and pepper to taste.

Slice it, heat olive oil in a skillet, add squash and
when sauteed to your perfection add some
italian seasoning. This is a nice side with steak or pork chops.

wash the yellow squash and grate! u can put it in pancakes, or u can just stir fry with adding some cumin, salt, and some curry power. Garnish with cilantro!

I like to steam mine with some garlic. You don't have to go to the trouble of using a steamer if you don't want to. Just cut it up into a sauce pan with a bit of water and garlic and it will steam just fine or you can even use the microwave. I also add zucchini and mushrooms.

I usually cook it with onions, garlic, white wine, and some kind of tomato product ( fresh, diced, sauce, paste). Sometimes I mix it with zucchini and green mexican squash.
