In other words, I have two packets of seeds that I bought a little over a year ago. I soaked them in water overnight and just planted them. Will they grow, or should I go looking for a new packet of seeds?

If u have any doubt about the speed of germination ,u can soak the seeds in very luke warm(very low temperature) water for one to two hours and sow them in soil.BY this way you can break the dormancy (resting period of seed) of the seed ,which the seeds develop in over the course of time(you said they are one year old)

If they're a year old, you'll get less to germinate than if they were fresh, but you should get some to germinate.

Make sure to follow the package directions about sun, watering, and thinning--since you have less seeds that will grow, you'll need to pay close attention to their growing conditions to maximize yield. I've tried growing seeds without thinning them as directed--not a bright idea. Don't try it yourself.

a year shoudl be ok, given that it wasn't too hot or humid where you stored them.
