I believe that'd be a "Photo Mosaic". It's pretty amazing that someone can create a photo-quality image with nothing but smaller photographs as a medium. Very cool.

You might also be thinking of tiling, where if you're trying to print a huge image on letter-sized paper, it breaks it into pieces and you reassemble it, puzzle-style.
