I can't say that it really matters, often I speak to the person who speaks to me first. If I speak first, I first smile and hallo the person on the right, then immediately the left, if he or she is not already engaged.

No set rule I hear. Just consulted with my buddy who lived in Oxford, England. But I would start with the person nearest to you (or across you if the table is small) of the opposite sex. Not sure if it changes.

There's no set order for conversation at the dinner table. It should flow naturally - it's not choreographed. Just relax, enjoy yourself, and be aware of those around you. Manners shouldn't be mannerist, it's just a case of being considerate to others' feelings, being polite, and being yourself whilst not stopping others have fun too, or making them uncomfortable.

Start with the more senior person (either in age or social status). Try to talk to both sides equally however.

A gentleman would escort a lady into dinner with the lady on his right arm and he would pay attention to the comfort of the lay etc. He would talk to her and get the feel of the mood and know when it was right to talk to others.

As far as I know, there is no rule on this. Why not the one across from you? After all, you're looking right at them!
If everyone began by speaking to the right, then everyone would be talking to the back of someone's head! LOL That whole vision is hysterical!! Thanks for the laugh!

If you start talking to the one on your left they are talking to the one on their right,if you talk the one on your right they are talking to the one on their left if you see what I mean!
