You actually need to have the full degree under your belt (as a minimum).
As for employment opportunities ... look at it like this.
I graduated in 1988. Class of 2800 students (all disciplines) ... of which 1400 were computer science or computer engineering degrees. Job opportunities at the time? About 250 - across the entire country (Canada). In comparison - I took my background in electrical engineering, speciailizing in electromagnetics and power systems. Total with same degree, 2 (including myself). Total job opportunities 200.
You do the math and see if a computer degree is worth the effort. Let alone an associate degree.

The difference between the two: Computer systems engineers are engineers that have additional training in the areas of software design and hardware-software integration while the Computer Science is focus more on the software design. Picking between the two is depends on your interest and basically there's not much difference in salary range . I don't agree with "me" that this kind of career is dying. IF you check monster and other job sites, these type of careers are the most sought after by the companies. They even tried outsourcing this but due to visa problems they're slowing down but if you're a local here in the US, you will have no problem finding a job. A type of work where you can demand for a sign-in bonus, free laptop, can work from home, travel and can always pay the bills.

An AS is probably going to get you a job as either a network administrator at a small company - or in a consulting firm, where you go around and help people with their computer problems and issues.
Getting further into a degree like Computer Engineering might get you into the hardware design of computers. An associates won't get you there.
There are a LOT of IT admin jobs out there, the pay isn't horrendous - but think about the job - all you do is fix computer problems, sometimes with a very grumpy user who just wants their computer back, sometimes with an entire production line down because their server is out, and their equipment isn't running. It's high pressure, often dealing with irate people.

An AS level isn't worth anything to an employer. If you go to university you will take a BSc as Computer systems is a science.
There are jobs out there but its competitive, make sure this is what you want to do before you go to uni because unless you are prepared to really work hard to find a job its going to be hard going. Trust me when I say I have first hand knowledge!

Sad to say an AS will get you a cashier job at the drive thru. A BA isn't much better. Most computer jobs went off shore, are done by prisoners, or illegal immigrants coming here from India or Pakistan. Sorry.

Today an AS doesn't really do much for you. Your best bet would be things like A+ and certifications if your BA is not an option.
