Pumpkin Pie Drops
Ingredients
1/2 pound butter, softened
1 cup brown sugar
1 egg
1 cup canned pumpkin
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves

Cinnamon Confectioners' Icing (below)

Instructions
Preheat oven to 350 degrees F.

In an electric mixer, on medium speed, cream butter and brown sugar until light. Add egg and pumpkin. Mix until well blended.

On low speed, add flour, baking soda, cinnamon, nutmeg and cloves. Mix just until blended.

Drop dough from a teaspoon onto parchment-lined cookie sheet, spacing each 2 inches apart.

Bake 10-12 minutes, or until firm.

Remove cookie sheet from the oven. Using a metal spatula, remove cookies from the cookie sheet and place on a wire cooling rack. Cool completely.

Frost with cinnamon confectioners' icing. Place a wired cooling rack on top of a parchment lined cookie sheet. This will catch any excess frosting and make clean up easier. Using a small spatula or butter knife, frost the top of the cookie.

Let frosting dry completely. Store in an airtight container at room temperature.

3 cups confectioners' sugar
1 teaspoon cinnamon
1/2 cup water

SMASHING PUMPKIN MARTINI
This spicy, pumpkin-infused cocktail would make a delightful aperitif from Halloween through Christmas. It was created by Felix Albano, manager of the bar at Fifty Seven Fifty Seven in New York City.

3 ounces spiced pumpkin vodka
1 ounce Amaretto

Garnish: toasted pumpkin seeds
For pumpkin seeds:
Heat a large heavy skillet over moderate heat until hot. Toast pumpkin seeds, stirring constantly, until they expand and begin to pop, 3 to 5 minutes. Transfer seeds to a plate to cool.

For Martini:
In a shaker filled with ice, stir spiced pumpkin vodka and Amaretto. Strain into a chilled cocktail glass.

Garnish with toasted pumpkin seeds.

Serves 1.

Vanilla cocktail candy rim sugar

White Chocolate Martini

2 ounces white chocolate consomme or white chocolate milk
1 1/2 ounces of Ketel One Vodka
1/2 ounce of Tuaca

Combine in a shake with ice. Shake vigourously and strain into a martini glass.

While we're talking about cocktails, our recent house drink (at our house, not the Guest House) is a rum and passionfruit concoction. So for those of you who like rum...

Pyrat and Passionfruit

1 1/2 ounces Pyrat XO Rum
1 quarter of a lime
3 ounces passionfruit juice (We use Ceres)

Squeeze the lime quarter in the bottom of a small shaker and add the piece of fruit to the container. Cover with ice and add the liqueurs. Shake well and pour into a rocks glass

Happy Thanksgiving
