Baked Macaroni and Cheese Recipe

INGREDIENTS:

* 1 1/2 cups uncooked elbow macaroni
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1/4 cup milk
* 1 cup half-and-half
* 1/4 teaspoon paprika
* 1/2 teaspoon pepper
* 2 1/2 cups grated sharp cheese, divided
* salt

PREPARATION:
Preheat oven to 350°. Cook macaroni in boiling salted water according to package directions; drain well and set aside. Meanwhile, melt butter in a medium saucepan over low heat. Blend in flour, stirring constantly, until smooth and bubbly.Gradually stir in milk and half-and-half. Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes. Remove from heat and add paprika, pepper, and 2 cups of the cheese; stir until cheese is melted and sauce is smooth. Combine sauce with the macaroni and add salt to taste. Place in a buttered 1 1/2-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter. Bake 25 to 30 minutes.
Serves 4 to 6.

2 cups elbow macaroni
2 eggs, beaten
2 cups evaporated milk
1/2 cup butter, melted
1/2 teaspoon cayenne pepper
2-1/2 cups grated sharp cheddar
1 cup bread crumbs
1 teaspoon paprika
1/4 cup grated Parmesan

Preheat the oven to 350 degrees F.
Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally until it is almost tender, 10 to 12 minutes. Drain, rinse with cold water, and set aside.

In a large bowl, beat the eggs with the milk, 1/4 cup melted butter, the cayenne pepper, and a teaspoon of salt.

Put half the macaroni into a buttered 2-quart casserole and top with half the cheddar cheese. Repeat. Pour the milk mixture over the macaroni and cheese.

In a small bowl, mix the bread crumbs with the paprika, the remaining butter, and the Parmesan. Sprinkle the bread crumb mixture over the macaroni and bake until brown and bubbly, 40 to 45 minutes. Serve warm.

Baked Mac-N-Cheese

1 can evaporated milk
2 cans water
1 pound pasta, cooked
1 pound american cheese
1 cup flour
1 stick of butter
Cook pasta and empty into a 9 X 13 glass baking pan.Melt butter in large sauce pan.Stir in flour.Mixture should make a ball.Slowly stir in milk and water.Add diced or sliced cheese.Stir frequently.
When all of the cheese is melted,pour sauce over pasta.Bake at 450 of aprox 20 min.Top should have some browned spots.

Baked Macaroni and Cheese:

This recipe is especially appealing to children.

16 ounces uncooked large elbow macaroni
1/2 cup butter or margarine
1/3 cup all-purpose flour
2 cups milk
3 cups (12 ounces) shredded Cheddar cheese, divided
1 (12-ounce) container small-curd cottage cheese
2 large eggs, lightly beaten
1 teaspoon salt
1/2 cup dry breadcrumbs
1 teaspoon Greek seasoning

Cook pasta according to package directions; drain.

Melt butter in a Dutch oven over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in milk; cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Stir in 2 cups Cheddar cheese and next 3 ingredients. Stir in pasta.

Spoon mixture into a lightly greased 13- x 9-inch baking dish. Top with remaining 1 cup Cheddar cheese. Combine breadcrumbs and Greek seasoning; sprinkle over cheese.

Bake at 350° for 25 minutes.

Yield: Makes 8 to 10 servings.

Done, Gone Mac & Cheese

5 C Lrg. Elbow Macaroni
1/2 lb. Sharp Cheddar Cheese, grated
1/2 lb. Longhorn Cheddar Cheese, grated
1/2 lb. Mexican Ranchero Cheese, crumbled
1 C Milk
1 1/2 C Crumbled Cheeto’s

Cook the Mac al dente, not quite done
Combine all the Cheeses
Layer Cheese and Mac, Cheese and Mac, (you get it)
Pour in the Milk
Top with Cheeto’s
Bake 45 min. @ 350
Footnote: This also is good with chopped Ham mixed with the Cheese.
Kids love it with Hot Dogs on Top, put them on top the last 15min.

I don't have a recipe but I use

Sharp or Extra Sharp cheese, Colby Jack and Mozzarella
(I use four to five blocks of cheese to each box of noodles)
2 eggs
canned milk and whole milk (makes it creamier than whole)
I use the BIG ziti noodles (I like the way it holds the cheese)
Seasoning Salt, Pepper, and Garlic Powder
I half way cook the noodles because you have to bake it.
Cut the blocks of cheeses up ( let them sit out they will be easier to cut) I use shredded mozzarella.

Drain noodles place back in pot Season Noodles ( not a lot of salt or garlic...cheese has a lot of salt)

Heat a little bit of milk (not super HOT) mix egg in milk (you don't want the egg to scramble in the pot or noodles) pour egg and milk mixture over noodles and stir in the cheeses.

Keep the pot VERY low until the cheese melts how you like it place in pan bake and you have Mac and Cheese ....if making for thanksgiving you may want to practice a little bit before you make the big dish and leave it in the oven with the foil covering for about 30 -35 minutes take foil off leave in oven until it's browned the way you like it. Use good cheeses I like Heluva Good (Personally)

If making a big batch cook each batch separately and mix it together in the baking pan than bake it.....this helps avoid over cooking the noodles and cooking in BULk is hard....this way is a little more time consuming, but helps you in the long run!!!

This is my husband's favorite version I make for him

6 Tbsp butter
1 pound elbow mac
3 12 oz. cans of evaporated milk
1 Tbsp dijon mustard
2 Tbsp favorite hot sauce
1 pound grated sharp cheddar
1/2 pound Velveeta, cubed
1/2 cup heavy cream
1 lightly beaten egg
Kosher salt
Fresh ground pepper
1 cup panko (or any kind of bread crumbs or stovetop stuffing)

Preheat oven to 350F and grease a 9x13 baking dish. Boil the pasta, drain and toss with the butter. Over medium heat bring the evaporated milk to a simmer and add to the mac. Add mustard, hot sauce, and cheddar and stir well. Add Velveeta cubes and cream and stir well. The chunks should be swimming in the sauce, not melting right away. Add egg, salt, and plenty of pepper.

Pour it all in the baking dish, top with bread crumbs and dot with butter and bake for 25 or 30 minutes.

Very simple. Cook 2 cups of mac. pour half into cooking dish. cover with one package of extra sharp cheddar. pour in the other half and cover with another package sharp cheddar. Mix it well and cover with more sharp cheddar. pou milk in the middle until you can just start to see it thru the mac. Bake on 350 degrees for about an hour covered. Uncover and bake another 15 - 20 minutes to crisp the top.
