4 large potatoes
2 cups sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
or your can just line a pan with vanilla wafers
instead
1/2 cup milk


Boil the potatoes until tender. When you stick a
fork in them it should go in easy but you don't
want them to fall apart.

Let the potatoes cool and then peel them.

Put the potatoes in a large mixing bowl and
mash them thoroughly with a potatoe masher.
Melt the butter and pour it and the other
ingredients in the bowl of potatoes. Stir
until well mixed.

Whether you used a ready made pie crust or
just cookies, pour the potatoes mixture
into the crust.

Put into an oven preheated to 375 degrees.
Cook for about 35-40 minutes or until a toothpick
inserted in the center comes out dry.

I like to eat the pie while still hot. It's
good cold too though.

If you want you can make a meringue topping by
blending confectionary sugar with egg whites.
After the pie is almost done, spread the
meringue thinly across the top. Continue baking
until the meringue turns light brown. If you
use the meiangue, you can add the egg yokes
to the pie if you like. I prefer my pie
without eggs, so I just save the yokes for breakfast

Sweet Potato Cake:

This cake is so moist that it doesn't need a frosting or glaze.

2 cups sugar
3/4 cup stick margarine, softened
3/4 cup egg substitute
2 (14 1/2-ounce) cans unsweetened mashed sweet potatoes
3 cups sifted cake flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 teaspoons vanilla extract
Cooking spray
1/4 cup flaked sweetened coconut
2 tablespoons finely chopped pecans

Preheat oven to 350°.

Beat sugar and margarine at medium speed of a mixer until well-blended (about 5 minutes). Gradually add egg substitute, beating well. Add 2 1/2 cups sweet potatoes (about 1 1/2 cans); beat well. Reserve remaining sweet potatoes for another use.

Combine flour and next 5 ingredients (flour through salt); stir well. Gradually add flour mixture to sweet potato mixture, beating well after each addition. Stir in vanilla.

Pour batter into a 10-inch tube pan coated with cooking spray. Sprinkle coconut and pecans over batter. Bake at 350° for 1 hour and 25 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan. Let cool completely on a wire rack.

Note: Substitute 6 egg whites (about 3/4 cup) for egg substitute, if desired.

Yield: 16 servings

Sweet Potato Cake ( works well when done in Sheet pans also.)


INGREDIENTS
2 cups sugar
1 1/2 cups vegetable oil
4 eggs
2 cups all purpose flour
3 tsp baking powder
3 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 T vanilla
1 cup chopped pecans
1 1/2 cups Bruce's mashed yams
1-20oz. can crushed pineapple
1 cup sugar
2 1/2 T corn starch
8oz. cream cheese
1/2 stick butter
1 lb. powdered sugar
1 T vanilla

Method:
Preheat oven to 350. Oil and flour three 9in. cake pans. Set aside. In a large mixing bowl, cream sugar and oil until well blended. Add eggs, one at a time, whipping after each addition. In a separate bowl, combine flour, baking powder, soda, salt and cinnamon. Add, a little at at time, into the egg mixture, blending well until all is incorporated. Fold in vanilla, pecans, and mashed yams. Once all is blended, pour evenly into cake pans. Bake 40 minutes or until cake is done. While cake is baking, make filling by combining pineapple, sugar and cornstarch. Bring to a low boil over medium-high heat, stirring constantly for 5 minutes. Once mixture thickens, remove from heat and allow filling to cool. In the bowl of an electric mixer, combine cream cheese, butter, powdered sugar and vanilla. Blend on low speed until well mixed. Whip until icing is fluffy and smooth. Remove and set aside. When cakes are done, remove from oven and allow to cool. Remove from baking pans and spread pineapple filling between layers. Ice with cream cheese frosting and serve.
