I'm making a quiche next week at school, and need ideas for a vegetable I can put in it! I've already decided on my meat (bacon), can anyone think of an original vegetable I can accompany the bacon with???

Asparagus (sauté in skillet first), spinach (well drained), finely chopped broccoli florets, cauliflower florets, broccoflower florets. edamame.

I don't eat bacon so I don't know exactly whether this would taste good or not, but if I was going to make a quiche I would put broccoli on it.

It would be easiest to do just appetizers and desserts, rather than a buffet dinner. Some people suggested pasta dishes, but pasta is tricky to keep hot (and not sticky) for a crowd.... So, crockpots with little meatballs; finger sandwiches (cucumber, tomato, watercress); tortilla roll-ups; Spinach dip (in hollowed out sourdough - refrigerate overnight); veggie/dip platters; fruit platters; cheese & cracker platters; dishes of nuts & mints; platters & tiers of small cookies, brownies, cream puffs, chocolate covered strawberries. Long plates of sliced jellyrolls; a few bundt cakes and cheesecakes. ... It's the presentation that makes the food look special - you don't need to have an extravagant dinner!

Savory Vegetable Mini Quiches (omit the bacon if you want in this one... it goes with the bacon obviously, test it out first) GL


Ingredients:
1 package (15 ounces) refrigerated pie crusts (2 crusts)
1/2 cup milk
2 eggs
4 slices bacon, crisply cooked, drained and chopped
1/2 cup finely chopped zucchini
1/2 cup finely chopped mushrooms
1 green onion with top, sliced
1/2 cup (2 ounces) shredded cheddar cheese
1 garlic clove, pressed
Dash of ground black pepper


Directions:
1. Preheat oven to 375°F. Let pie crusts stand at room temperature 15 minutes. Lightly spray Deluxe Mini-Muffin Pan with vegetable oil using Kitchen Spritzer. Whisk milk and eggs in Classic Batter Bowl.

2. Chop bacon, zucchini and mushrooms using Food Chopper. Add bacon, zucchini, mushrooms, green onion, cheese, garlic pressed with Garlic Press and black pepper to batter bowl; set aside.

3. On lightly floured surface, roll one crust to a 12-inch circle using Baker's Roller™. Using Scalloped Bread Tube, cut out 12 pastry pieces. Press one pastry piece into each muffin cup using Mini-Tart Shaper. Repeat with remaining crust to fill remaining muffin cups.

4. Using Small Scoop, fill each muffin cup with a rounded scoop of vegetable mixture. Bake 17-20 minutes or until crusts are light golden brown. Cool in pan 2 minutes; carefully remove mini quiches from pan. Serve warm.

Yield: 24 appetizers

You could have a choice of vegetables... as mentioned earlier. However, why don't you just roast them in the oven for approx. 25 minutes beforehand, with a couple of sliced garlic cloves, a little sweet pepper (bell pepper) and gently covered in olive oil... adds quite a bit of flavour to the vegetables.

spinach goes well with it and is full of iron
or why not have peppers
or tomatoes (you could have them on the top too to decorate it!)
asparagus would go amazingly well with it too
or why not try frying some aubergine off and putting that into it!

In the event it's a fruit they have seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
