i always liked Amazing Grace even though it's not traditionally for a wedding... it's really joyous and uplifting.
Greensleeves is pretty, it's a little more bittersweet.

As far as celtic-ish sounding songs go "You raise me up" from the Celtic Women cd is pretty good but here are some more fave

We used:
The Grace of Life is Theirs by Vaughn Williams, Rapsodie by Rachmaninoff, Ave Maria by Bach/Gounod, Jesu, Joy of Man's Desiring by JS Bach, and Canon in D by Pachelbel for prelude music.
When love is found by Haas/Cotter for the mothers being seated
Hymne by Vanglis for the bridesmaids (my favorite out of all our songs!!)
and Rondeau by Mouret for the bride
Set Me as a Seal by Roger Summers is a pretty song, we used it for our unity candle.
If you have an organist or a soloist playing at the wedding, you should ask their advice! Ours gave us some great suggestions and knew from past experience what kind of reactions different songs get.

My cousin used Shania Twain's From This Moment for her wedding.
98 Degrees' I Do (Cherish You) is pretty good too.
Personally, I'd really love to use Flying Without Wings by Westlife for my wedding in future.

We used Pachelbel's Canon in D for when my wife came down the aisle and "Ave Maria" for when the mothers were sat. I was worried because at first I thought Ave Maria was the song that they sang at Barmitzfas (that was Hava Nagela) but it's a really nice song.
