I generally don't stuff my turkey with anything I expect to eat - I'm just too leery of food poisoning. When I make turkey for Thanksgiving, I generally take some onions and quarter them, cut celery stalks into thirds, and peel a few cloves of garlic and then I use those to stuff my turkey.

Stuffing's- made of bread and eggs , are a relatively new concept, for a very long time it was other meats (such as the infamous Turducken - a turkey stuffed with a duck and a chicken) You could use any number of items - eggs, sausage, fruit or even fruit cake soaked in rum (believe it or not pretty tasty). You always want to be mindful of cook times when combining meats and be sure everything was cooked to the correct temperature to avoid any food borne illness - but as long as you practice safe handling procedures you will be fine.

I don't like the stuffing cooked in the turkey. I put an onion and garlic clove inside the turkey. It seems to give it a good flavor.

Fresh herbs, lemon, onion, garlic, celery, bell pepper, and apples. That's what I put in the turkey cavity when it's cooking. It helps keep the meat moist and juicy and flavorful.

why not try making your own stuffing such as-
fried onions, smokey bacon, nuts, fresh sage, sausage meat, bread crumbs and stock to make your own, i think that homemade is a lot nicer than pack stuffing. why stop there you could put what ever suits you in there.

Onion (whole, cut in quarters), some lemon and orange slices taste fresh and keep it moist. Also whole sprigs of fresh herbs put inside too. Yummy!

Its real good as a relish and its good anytime of the year, also you can make all sorts of yummy breads with cranberries.
