I love Jacket potatoes but they never turn out the way i like them crisp on the outside fluffy in the middle
anyone know how i can achive this?

INGREDIENTS
1 medium baking potato
1 teaspoon olive oil
1/2 teaspoon salt
2 teaspoons butter
1 pinch freshly ground black pepper
1/4 cup shredded Cheddar cheese
DIRECTIONS
Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

You can start it off in the microwave first this is good if you don't have time to do it completely in the oven and then bake it at 180-200 for just over an hour if not too large. If just baking, I do the same heat but for longer, say 45 minutes each side. I never put oil or anything on my potatoes and they turn out lovely , just how you describe them above.

I give mine a quick wash & prick them all over... place in microwave for 8/12 mins depending on size of potato, when done, rub with salt cover with tin foil place in oven gas mark 5 and cook for about 15 mins, remove foil and cook for a futher 10 mins..

They will be light and fluffy in the middle and nice and crisp on the outer !!!

Try the links below...I do the same thing when I am cooking at home; since I have a stove left over from the late 60's I vary the temperature due to size. But the center is amazingly yummy and tender, and when done right, with all the add-on's such as butter, bacon bits, chili, sour cream, cheese... Oh! Too delicious! And read the directions carefully... adding the oil and salt helps a LOT!

For a large potato - pierce it half a dozen times almost through with a sharp knife - microwave for 10 minutes. Brush with mixture of oil and salt - put in very hot oven near top for 15-20 minutes. Gorgeous!

Microwave for 5-10 minutes, depending on size of potato. Then finish off in the oven.

Rub the skins with olive oil & salt. Bake at top of oven on a wire shelf at about 220 degrees for an hour and a half. Gorgeous!

wash n dry the spuds, put some olive oil in your hands and coat each one then sprinkle with Maldon Sea Salt, skewer and bake on gas 9 for 1 hour turning on the quarter every 15 mins.

To cook them in the oven, it's best if you cover them with tinfoil first, cut a cross in the potato then wrap in tin foil, place in a hot oven for around 30mins, then take off the tin foil and put back in the oven for around 15mins, they should turn out just the way you like them.mmmmm Make one for me while you are at it., you have made me hungry! Thanks! ps. if you want when you've taken off the tin foil, rub them over with a little oil and salt first to make them crispy.

the way i do them is wrap them in foil and bake them at gas mark 7 for about 50 mins and you should get them nice and crispy on the outside and light on the inside, then for the last 5 mins let them cook without the foil to make them even more cisp!

try that i bet you it will work!
